Wingman Metrics
Seven wines. That's the whole list. At an omakase concept where the kitchen is doing serious work, the wine program feels like it was assembled in about fifteen minutes by someone who had never eaten sushi before.
The list reads like a mid-tier grocery store endcap: 13 Celsius Sauvignon Blanc, Running Wild Chardonnay, Imagery Pinot Noir, Tribute Cabernet Sauvignon. These are approachable, inoffensive supermarket staples — nothing wrong with them exactly, but they have no business anchoring the wine program at an omakase experience. The Champagne side gets slightly more interesting with Hampton Water Bubbly Rosé and the obligatory Veuve Clicquot, topped by a Dom Pérignon 2013 that sticks out like a tuxedo at a barbeque. There's no regional coherence, no nod to Burgundy or German Riesling or anything that actually makes sense next to raw fish and rice. The list isn't curated — it's just present.
By-the-glass specifics aren't listed, which tells you everything. In an omakase format where courses come fast and pairing by the pour would genuinely elevate the meal, the lack of a transparent glass program is a real miss. You're likely picking off the bottle list and hoping for the best.
Hampton Water Bubbly Rosé — null
It's the only wine on the list that actually makes sense next to nigiri. Bubbles and raw fish is a classic pairing, and Hampton Water is a crowd-pleasing, food-friendly Provence-style rosé. If you're going to order anything here, start here.
Dom Pérignon 2013
It's wildly out of place on a seven-bottle list, and you'll almost certainly overpay for it, but the 2013 Dom is legitimately one of the great recent vintage releases — structured, precise, and in the right hands, a stunning match for high-quality sushi. If you're celebrating and the price isn't punishing, it's the one bottle on this list that was actually worth someone's thought.
Tribute Cabernet Sauvignon
A tannic, full-bodied Cab at an omakase? Hard pass. It's going to steamroll every delicate bite on the omakase menu and leave you wondering why everything tastes like oak and regret.
Hampton Water Bubbly Rosé + Omakase nigiri selection
Effervescence cuts through the fat of richer fish like salmon and yellowtail, while the rosé's light fruit profile doesn't compete with the rice seasoning or the wasabi. It's the only option on this list that actually plays well with the food.
The Bottom Line
Sushi By Bou is clearly here to serve great fish — and the wine list confirms that wine is very much an afterthought. Order the Dom if you're feeling flush or the Hampton Water if you're being sensible, and let the food do the heavy lifting.
