Wingman Metrics
The wine list at Edge lands with the confidence of a restaurant that takes its program seriously — 80-plus bottles spanning Burgundy, Napa, Alsace, Provence, and New Zealand is not nothing for downtown Bethlehem. It reads like a list curated by someone with good taste but limited appetite for risk, hitting the crowd-pleasing peaks without venturing too far into the weeds. For the Lehigh Valley, this clears the bar comfortably.
The list leans on reliable all-stars — Kosta Browne anchors the Pinot Noir side with serious credibility, and Louis Jadot Bourgogne gives the Burgundy section a recognizable entry point without asking too much of the diner. Cloudy Bay shows up as a safe but well-chosen New Zealand flag-bearer, and Whispering Angel keeps the Provence rosé crowd happy. What's missing is any real depth below the famous names — there's no exploration of grower Champagne, no Rhône to speak of, and the Alsace presence, while interesting for this market, doesn't go far enough to be a genuine statement. For a restaurant with French-Asian influences on the plate, a more adventurous Alsatian or Loire pull would make the list feel intentional rather than assembled.
Twelve to eighteen by-the-glass options is a respectable spread, and the program covers the bases — red, white, rosé — without leaning too heavily on any one category. The quality tier of the pour selections tracks with the bottle list, meaning you're getting recognizable names rather than mystery bulk wine, which matters. Rotation doesn't appear to be a priority here; this feels like a set-it list rather than one that evolves with the season.
Louis Jadot Bourgogne — $48
Louis Jadot Bourgogne is a known quantity that overdelivers relative to its position on a restaurant list — it's not flashy, but it's honest Burgundy at a price point that won't make you do mental math about whether you're getting played. A smart order.
Cloudy Bay Sauvignon Blanc
Easy to dismiss as the default New Zealand Sauv Blanc everyone already knows, but Cloudy Bay earns its reputation every vintage — it's genuinely better than most of its imitators, and on a list this focused on crowd-pleasers, it quietly stands out as one of the most food-friendly bottles available.
Whispering Angel Rosé
Whispering Angel is fine wine that has been so thoroughly absorbed into the luxury lifestyle brand ecosystem that you're paying a significant premium for the pink bottle and the Instagram moment. At Provence rosé prices in a restaurant context, you're almost certainly better served hunting anything else on the list.
Kosta Browne Pinot Noir + Miso Glazed Salmon
Kosta Browne's Pinot runs rich and fruit-forward with enough acidity to cut through the sweet-savory lacquer on the salmon without steamrolling the miso's umami depth. It's a heavier pour for fish, but the dish earns it.
✔️ The Bottom Line
Edge is a dependable night out for wine in a market that doesn't always take the glass seriously — the list won't dazzle you, but it won't embarrass you either. Send a friend here knowing they'll drink well; just steer them away from the rosé markup.
Downtown Bethlehem · Allentown · Upscale American
1741 on the Terrace isn't trying to be a wine destination, but the fortified and dessert wine program alone is worth the visit — it's genuinely rare to find this much care put into the end-of-meal pours. Come for the atmosphere, stay through dessert.

Twisted Olive is a solid neighborhood wine stop — fair prices, familiar faces on the list, nothing that'll blow your mind but nothing that'll ruin your night either. Send a friend here for a casual Wednesday dinner, not a special occasion splurge.

Bethlehem/Wind Creek Resort · Allentown · Steakhouse
Chop House does what a casino steakhouse wine list is supposed to do: it stocks the names people recognize, charges casino prices for them, and gets out of the way. If you're here for the prime ribeye and a bottle of Jordan, you'll leave happy — just don't look too hard at the markups.

Downtown Bethlehem · Allentown · Contemporary American Rooftop
Zest isn't where you go to geek out on wine, but it is where you go to drink something decent while watching the sun dip over Bethlehem without dropping $100. For a rooftop bar, this list is honest, fairly priced, and does exactly what it promises.

Bolete is the best wine list in the Lehigh Valley by a comfortable margin, and it would hold its own in most major cities. If you're driving 45 minutes for dinner, the wine list alone makes it worth the trip.

Westside Grill is the dependable date-night wine list you've seen a hundred times — California hits, a few smart French imports, markups that lean steep but not insulting. It's not a destination for wine lovers, but it won't ruin your dinner either.
