The wine list at Chop House arrives looking the part — leather-bound, substantial, heavy on Napa Cab. It's exactly what you'd expect from a casino steakhouse that wants you to feel like you're spending well, which is a slightly different thing than actually spending well.
The list runs 100-150 bottles deep and leans hard into the California Greatest Hits: Caymus, Silver Oak Alexander Valley, Jordan, Duckhorn, Rombauer — names that sell themselves so the staff doesn't have to work very hard. There's a nod to Bordeaux and Tuscany for the old-world curious, but don't come here expecting grower Champagne or anything that requires explanation. This is a list built for people who already know what they want and want to feel comfortable ordering it. It does that job fine.
The glass program runs 12-20 options, hitting the expected bases: Meiomi Pinot Noir, Kim Crawford Sauvignon Blanc, Chateau Ste. Michelle Riesling. Nothing surprising, but there's enough range to cover a table of mixed drinkers. Rotation appears minimal — this list is set and left alone.
Kim Crawford Sauvignon Blanc Marlborough 2023 — $13 (glass)
At $13 a glass versus a $16 retail bottle, this is actually the closest thing to a fair pour on the list. It's not exciting, but it's clean, crisp, and won't burn a hole in your wallet while you wait for your steak.
Chateau Ste. Michelle Riesling Columbia Valley 2022
Everyone ignores the Riesling at a steakhouse and orders another Cab. Don't. At $11 a glass, this Washington state bottle brings enough brightness and off-dry balance to cut through a rich lobster bisque or hold its own against a wedge salad — and nobody at your table will fight you for it.
Daou Cabernet Sauvignon Paso Robles 2021
A $25 retail bottle sitting at $60 on the list is a 140% markup, and Daou isn't rare or hard to find. This is the most egregious price on the menu. Order the Jordan instead — at least you're overpaying for something with a track record.
Jordan Cabernet Sauvignon Alexander Valley 2019 + Prime dry-aged ribeye
Jordan's Alexander Valley Cab is built for exactly this moment — structured tannins, dark fruit, enough acidity to cut through the fat on a dry-aged ribeye. It's a classic for a reason, and at $115 it's one of the less offensive bottles on the list relative to what you're getting.

Chop House does what a casino steakhouse wine list is supposed to do: it stocks the names people recognize, charges casino prices for them, and gets out of the way. If you're here for the prime ribeye and a bottle of Jordan, you'll leave happy — just don't look too hard at the markups.

1741 on the Terrace isn't trying to be a wine destination, but the fortified and dessert wine program alone is worth the visit — it's genuinely rare to find this much care put into the end-of-meal pours. Come for the atmosphere, stay through dessert.
