Walk into Dragon Meadery and you immediately know you're not in a wine bar — and that's precisely the point. This is a small-batch, appointment-driven tasting room built around handcrafted mead, and it wears that identity proudly. If you came looking for a Cabernet list, you took a wrong turn; if you came curious about what Colorado honey can become in the right hands, you're exactly where you should be.
The lineup here isn't measured in wine regions or grape varieties — it's measured in imagination. Dragon Meadery produces a range of meads spanning traditional styles to fruit-forward melomels and spiced or floral expressions, all rooted in Colorado ingredients and small-batch craft. The breadth is modest by wine list standards, but every pour is intentional; this isn't a place that throws 80 SKUs at you and hopes something sticks. Gaps exist — don't expect old-world depth or a cellar program — but within its lane, the selection shows genuine range and a clear point of view.
The tasting room format means you're essentially drinking by the glass by design, typically working through a flight that introduces the range from dry to sweet, traditional to experimental. There's no rotating BTG chalkboard in the conventional sense, but the tasting structure functions as one, giving you meaningful exposure to the portfolio without committing to a full bottle. Seasonally inspired releases do appear, so what's pouring when you visit may shift from one trip to the next.
The Bottom Line
Dragon Meadery isn't a wine destination — it's something more interesting. If you send a friend here expecting Burgundy, they'll be lost; if you send them open-minded and curious, they'll probably come home with a bottle of something they've never tried before and can't stop talking about.

Ladrón Cellars is doing something genuinely independent in Aurora — all house-made, a real range of varieties, and a concept that holds together.
