Wingman Metrics
The list opens with a section literally called 'Sexy Under $60' and it earns that name without apology. Sixty-eight labels in a French-leaning bistro in Tacoma, and almost nothing here is what you'd find at a safe neighborhood restaurant. Someone is paying attention.
This list reads like a love letter to natural and low-intervention wine — Alsace, Loire, Galicia, the Azores, biodynamic Austria, and obscure northern Italian reds all show up with intention. The Quinta de Muradella bottlings from Monterrei (a region most wine lists haven't heard of) sit next to Burlotto and Accornero, which are legitimate Piedmont producers. The Champagne section punches above the restaurant's weight — Mousse Fils across three labels and a Krug Grande Cuvée at $316 signals that whoever built this list has a point of view. There are real gaps in new world coverage, but that feels like a deliberate editorial choice rather than an oversight.
By-the-glass specifics weren't available from our visit, which is the one frustrating blind spot in an otherwise well-considered program. Given the list's character, we'd expect the pours to rotate thoughtfully — but you may want to call ahead or ask on arrival to see what's open.
Olivier Pithon Mon P'tit Pithon Blanc 2022 — $54
Pithon is a certified biodynamic producer in Roussillon who doesn't get nearly enough credit outside of wine-nerd circles. This is a genuinely interesting white at a price that doesn't punish you for being curious.
Azienda Agricola Accornero Viarì, Ruchè, Castagnole Monferrato 2020
Ruchè is one of Piedmont's most underrated native grapes — floral, slightly spicy, and nothing like what most people expect from northern Italy. Most diners will default to the Barbera. Don't. This is the interesting pour on the table.
Krug Grande Cuvée, 172eme
At $316 it's not a ripoff for Krug — the markup is actually reasonable — but in a room built for discovery, dropping that much on something you could find at any fine dining Champagne list feels like missing the point entirely. Spend it on three other bottles instead.
Fabien Duveau Saumur-Champigny 2021 + Steak frites or duck preparation
Saumur-Champigny is Cabernet Franc country — medium-bodied, herby, and built for bistro food. Duveau's version at $56 is the kind of Loire red that makes French cooking make sense.
The Bottom Line
Corbéau is doing something genuinely rare in the Pacific Northwest: building a wine list with actual curatorial courage at prices that don't make you wince. If you're within driving distance of Tacoma, this is worth the trip.

Gig Harbor Wine Co. is a one-brand wine bar that somehow doesn't feel like a vanity project — the range is thoughtful, the prices are honest, and the whole setup rewards locals who want to drink well without the markup theater. If you're open to going all-in on a single producer for a night, this is a genuinely fun place to do it.

Tacoma Wine Merchants is doing something quietly remarkable: a bottle shop and enoteca with Bartolo Mascarello on the shelf and a $17 Rosso Conero next to it, all priced like they actually want to move wine. If you're anywhere near Tacoma, this is worth a detour.

Primo Grill is doing more with its wine list than it gets credit for — especially in a city where 'solid restaurant wine program' often means a wall of Meiomi. It's not flashy, but the Pacific Northwest depth is real and the European picks show genuine curiosity. We'd send a friend here without hesitation.
