They're crowd-pleasing, safe, and completely interchangeable in this context. There's no white wine, no sparkling, no alternative red, no Old World presence — just a row of reliable Napa Cabs priced uniformly at $89. For a restaurant where the whole experience is built around meat and abundance, the wine program shows none of that same ambition.
