The wine list at Cattle Baron reads like a greatest-hits album from the California wine aisle at your local grocery store — familiar names, zero surprises. That's not necessarily a knock; in a casual steakhouse in Las Cruces, most people are here for the prime rib, not a deep dive into Burgundy. What you see is exactly what you get.
The list runs 30 to 50 bottles, leaning hard on California and the Pacific Northwest — think Caymus, Meiomi, Kendall-Jackson, and their neighbors on that particular shelf. There's no meaningful Old World presence to speak of, and adventurous drinkers won't find much to get excited about. The upside is that these are crowd-tested bottles that most guests are comfortable ordering, which keeps the table happy even if it doesn't keep things interesting. Gaps are obvious: no Malbec for the steak crowd, no Sauvignon Blanc for the seafood side of the menu.
The by-the-glass program runs 8 to 12 options, which is a reasonable count for a casual steakhouse. Expect the usual suspects — a Chardonnay, a Cab, probably a Pinot Noir — but don't expect much rotation or seasonal freshness. It gets the job done for the couple who wants a glass with dinner without committing to a bottle.
Meiomi Pinot Noir — $12
It's everywhere, yes, but Meiomi by the glass at a fair pour price is genuinely solid for a casual steakhouse setting — approachable, fruit-forward, and versatile enough to handle both the beef and the seafood sides of the menu.
Kendall-Jackson Vintner's Reserve Chardonnay
Most people dismiss KJ Chard as grocery store wine, and honestly, they're not wrong — but at a steakhouse, a cold glass of this with the grilled shrimp is a better call than most give it credit for. It's consistent, well-made, and underordered here.
Caymus Cabernet Sauvignon
Caymus is a fine wine, but it is one of the most marked-up bottles in American restaurants. You're paying for the name recognition as much as what's in the glass, and at a steakhouse in this price range, there's almost certainly a better dollar-per-sip play on the list.
Meiomi Pinot Noir + Grilled Shrimp
Pinot Noir's lighter body and bright acidity won't steamroll the shrimp the way a big Cab would — and Meiomi's coastal fruit character plays nicely against anything that came out of the ocean.

Cattle Baron isn't where you go to geek out on wine, but if you're in Las Cruces and you want a decent glass with a well-cooked steak, it delivers exactly that. Send a friend here for the beef; just don't tell them to splurge on the Caymus.

For a hotel cantina in Las Cruces, this list earns genuine respect by putting New Mexico producers front and center instead of hiding behind safe California imports. If you're anywhere near Hatch chile country and haven't tried Gruet with your enchiladas, Garduños is a reasonable place to fix that.

Ristra isn't going to blow any wine obsessives away, but for a hotel restaurant in Las Cruces it's doing something genuinely worthwhile — championing local producers on a list that could have easily gone full lazy-California. Come for the green chile, order the Gruet, and leave more impressed with New Mexico wine than you expected to be.
