Walking into Buffalo Block inside the historic Rex Hotel, the room earns its confidence — exposed brick, warm leather, dark wood, the whole steakhouse fantasy done right. The wine list matches the room: California-forward, name-brand heavy, and clearly built to impress rather than surprise. It's a list that knows its audience.
Selection Deep Dive
This is a greatest-hits record from Napa and Sonoma, and it's not trying to be anything else. Caymus, Silver Oak Alexander Valley, Stag's Leap, Jordan, Duckhorn, Far Niente, Rombauer, Opus One — all the usual suspects are present and accounted for. With 150 to 250 bottles on the list, there's real depth within that California lane, even if the list rarely ventures beyond it. Don't come here expecting a Burgundy rabbit hole or a natural wine experiment — but if you want a well-sourced, steak-ready Cab, you're in the right place.

Everyone at the table is ordering Cab, and that's fine. But Duckhorn's Merlot quietly holds its own against a prime ribeye — it's softer, a little more giving, and often overlooked precisely because everyone's chasing the bigger red. Worth the detour.
Opus One
Yes, it's Opus One. Yes, it's impressive to say. But at steakhouse markup in Billings, Montana, you're paying a significant premium for the name on a wine that doesn't outperform a Jordan or Stag's Leap by nearly the margin the price gap suggests. Save it for a special occasion somewhere with a cellar program built around it.
Stag's Leap Wine Cellars Cabernet Sauvignon + Dry-aged New York strip
Stag's Leap Cab has enough structure to stand up to a dry-aged strip without bulldozing it — the wine's dark fruit and restrained tannins let the beef's minerality and funk actually come through. Classic match, executed well.

Buffalo Block is a legit steakhouse wine list in a market where the bar isn't always high — the California selection is well-curated, the setting is excellent, and the Wine Spectator nod is deserved. It's not an adventure, but it's a reliable night out, and in Billings, that counts for a lot.
