There's nothing here that's going to surprise you, but in a steakhouse built around prime rib and a cold Montana night, that's not necessarily the worst thing. It's a list designed to comfort, not to challenge.
The 30-50 bottle list leans heavily on California, Washington, and Oregon — the West Coast triumvirate that dominates casual-upscale American dining. You'll find recognizable names that restaurant guests trust on sight, which is the point. Don't come here looking for Rhône producers or anything with a natural wine bent; this list exists to sell bottles to steak eaters, full stop. The gaps are real — no meaningful depth in Old World wines, no adventurous domestic picks — but what's here does the job it's hired to do.
Ten to sixteen options by the glass at $9–$16 is a reasonable spread for Billings, and the price ceiling won't shock anyone. At the low end of the glass price range, this Washington Riesling punches above what most people expect from a steakhouse list. It's one of the few wines here that shows some actual personality — bright acidity, a little stone fruit — and it's a genuine producer, not a bulk label dressed up in a fancy name.

Stag's Leap Cab is a classic Napa producer with enough structure and dark fruit to stand up to the richness of a slow-roasted prime rib. It's the most serious wine on this list, and it earns its place next to the most serious dish on the menu.

Jaker's is a perfectly fine place to drink wine with a steak in Billings — it's not trying to be anything more than that, and mostly it succeeds. If you're expecting discovery or value, temper your expectations; if you just want a solid Cab with your prime rib, you'll leave satisfied.
