Tucked inside Hotel Indigo, Brazos Bar & Bistro shows up looking polished — the blue-accented room signals ambition. The wine list follows that same energy: it wants to impress, and in spots it does. But flip past the first page and you're mostly in name-brand California territory, which is fine if that's your thing.
The list runs 30 to 50 bottles and leans hard on California, with Napa, Sonoma Coast, Russian River Valley, and Lodi all represented — plus a detour to Oregon and Mendoza that we appreciate. The Prisoner family makes a double appearance (Unshackled and The Prisoner itself), which tells you something about the crowd they're playing to. There's a Joseph Phelps Freestone Pinot and a Taddei Russian River Chardonnay that show someone has at least some taste. But outside of those brighter spots, this list is built for brand recognition, not discovery.
Ten-plus pours by the glass is respectable for a hotel restaurant in Waco, and the $8–$18 range gives you room to explore without committing to a bottle. The selections mirror the bottle list — heavy California, recognizable names — so don't expect anything to surprise you, but you won't be stuck with a house pour from a mystery jug either.
Altos Del Plata Malbec, Mendoza — $32
At the low end of the bottle range, this Mendoza Malbec punches above its price point — ripe, structured, and an easy yes alongside their heavier plates. It's also the one bottle on the list that isn't trying to coast on a famous California label.
Joseph Phelps Freestone Pinot Noir, Sonoma Coast
Freestone is Phelps's cooler-climate Sonoma Coast project and it flies under the radar compared to the brand's Insignia fame. Most people at this restaurant are ordering The Prisoner. Don't be most people.
The Prisoner Red Blend, Napa Valley
The Prisoner is a solid wine in the right context, but at hotel-restaurant markups it becomes a hard sell — you're paying for the label more than what's in the glass. With the Unshackled (the lighter sibling) also on the list at a lower price, there's almost no reason to spring for this one here.
Taddei Chardonnay, Russian River Valley + Johnny Crab Cakes
Russian River Chardonnay has the weight and brightness to handle a crab cake without drowning it — creamy texture, enough acidity to cut through any richness. Taddei brings more character than the Kendall-Jackson and it's the smarter spend at this table.

Brazos Bar & Bistro is exactly what a solid hotel restaurant should be — reliable, approachable, and not embarrassing. If you're in Waco and want a glass of something decent with dinner, you'll leave satisfied; just don't come expecting a revelation.

BJ's wine list exists because it has to, not because anyone loves it — this is a beer destination first and everything else is an afterthought. If you're here on a Wednesday during happy hour, grab the $5 Dark Horse and call it honest; otherwise, just drink the beer.

Olive Garden Waco's wine list is a corporate afterthought dressed up with Italian flags — gouge-level markups on supermarket bottles, no staff expertise, and zero ambition. Order the cocktails, drink the endless coffee, or BYOB if they'll let you. The breadsticks don't need wine anyway.
