California is the star here, and Bohanan's leans into it hard — Caymus Special Selection, Stag's Leap CASK 23, Kistler, Far Niente, Jordan, Silver Oak, Opus One, and Beringer Private Reserve all make appearances, which reads like a greatest-hits tour of Napa and Sonoma. France holds its own with Chateau Margaux and Lynch-Bages anchoring the Bordeaux section, giving the trophy wine crowd something to chase. Most tables here are scanning for California and ignoring the Bordeaux section entirely. That's a mistake. Lynch-Bages is a Pauillac that punches with Margaux-adjacent class at a fraction of the grand cru price, and it absolutely sings next to a dry-aged bone-in ribeye.

Caymus Special Selection is the default order for people who haven't looked past the first page of the list, and restaurants like this know it — markup reflects demand. At a steakhouse with Stag's Leap CASK 23 and Opus One on the same card, there are better ways to spend your money.
