Bliss leans into the classics with a 100+ bottle list that hits the expected notes — Burgundy, Napa, Champagne — without taking many risks. The by-the-glass selection is deeper than most upscale spots in San Antonio, with 10+ pours spanning sparkling to Zinfandel, but markups are aggressive across the board.
The list spreads its bets between Old World standards (Burgundy Pinot, Mosel Riesling, Rioja) and California heavy-hitters like Ridge, Flowers, and Cliff Lede. There's a token nod to Texas producers and a decent Champagne selection that runs from Henriot to Taittinger, but nothing pushes boundaries or surprises. The Zinfandel section shows some personality with Old Ghost and Turley, but overall this reads like a well-executed playbook from 2010 — respectable producers, safe choices, zero adventure.
Ten-plus glass pours is a strong showing, and they're not phoning it in with grocery store standards. Head High Pinot Noir at $15 and Louis Latour Mercurey at $20 offer legitimate quality, though both carry 200-250% markups.
