First Impression
Bliss leans into the classics with a 100+ bottle list that hits the expected notes — Burgundy, Napa, Champagne — without taking many risks. The by-the-glass selection is deeper than most upscale spots in San Antonio, with 10+ pours spanning sparkling to Zinfandel, but markups are aggressive across the board.
Selection Deep Dive
The list spreads its bets between Old World standards (Burgundy Pinot, Mosel Riesling, Rioja) and California heavy-hitters like Ridge, Flowers, and Cliff Lede. There's a token nod to Texas producers and a decent Champagne selection that runs from Henriot to Taittinger, but nothing pushes boundaries or surprises. The Zinfandel section shows some personality with Old Ghost and Turley, but overall this reads like a well-executed playbook from 2010 — respectable producers, safe choices, zero adventure.
By the Glass
Ten-plus glass pours is a strong showing, and they're not phoning it in with grocery store standards. Head High Pinot Noir at $15 and Louis Latour Mercurey at $20 offer legitimate quality, though both carry 200-250% markups. The Henriot Champagne by the glass at $24 is a classy move for date night, even if it's marked up 300% from retail.
Merry Edwards Sauvignon Blanc Russian River Valley 2019 — $45
Only 113% markup on a serious producer — rare restraint on this list
Karl Josef Kabinett Riesling Mosel 2020
At $40, it's the most food-friendly bottle here and criminally overlooked in a sea of Napa Cabs
Domaine Delaporte Sancerre Chavignol 2020
Solid producer but $76 for a $45 retail bottle is a 269% gouge — order the Merry Edwards instead
Louis Latour Mercurey Pinot Noir 2016 + Pan-seared scallops
Burgundian elegance cuts through richness without overpowering delicate seafood — textbook pairing
✔️ The Bottom Line
Bliss delivers a competent, classic-leaning list that won't embarrass you on date night, but the steep markups and safe selections make it a wine program that coasts on location and ambiance rather than pushing for excellence.
