Wingman Metrics
Ten bottles. That's it. That's the list. At first glance it reads like a dare — but then you clock Kékfrankos from Hungary, a Palomino from Subject to Change, and a Carignan from Le Mazel, and suddenly you realize Bar Gemini isn't cutting corners, it's cutting the fat. This is a list built with conviction, not committee.
Every bottle here is doing something weird in the best possible way. The Calvez Bobinet Piak! is a Cabernet Franc Blanc de Noirs from the Loire — pink-ish in color, funky in spirit — sitting next to the Gismondi Foresta Malvasia di Candia, an obscure Italian white that most wine bars wouldn't touch. The Vaskapu Kert Kékfrankos Blend out of Hungary and the Maurer Red Fruit November Cabernet from Serbia round out a red selection that's aggressively anti-Napa. There's a geographic scatter here — Austria, Loire, California, Hungary, Serbia, France — that shouldn't work but absolutely does.
The full list is by the glass, which is a bold and generous move. At $14–$20 a pour for wines this interesting, you're essentially getting a natural wine flight by default if you order two or three glasses. There's no separate BTG tier — everything on the menu is pourable, which means the bar is betting you'll explore, and they're right to bet that.
Delevende Mere Mirroir Syrah Blend 2023 — $33
The cheapest bottle on the list and it's a Syrah blend — a genre that often runs $50+ at comparable spots. At $33, you're drinking well below what this level of curation typically costs.
Vaskapu Kert Kékfrankos Blend 2023
Kékfrankos — aka Blaufränkisch — is Hungary's answer to a serious, structured red, and almost nobody at the table will know what it is. That's exactly why you order it. Savory, lifted, and nothing like the Cab Franc it'll get compared to.
Schodl Pét Naturel Grüner Veltliner
At $45 it's the most expensive bottle on a list where everything else tops out at $39. Grüner Pét Nat is a fun novelty but it's the one spot where the value math doesn't quite work — the extra $8–$12 over comparable bottles doesn't buy you much.

Palomino is bone-dry, oxidative, and a little nutty — it was born to cut through rich, salty bites. Whatever they're running as snacks or charcuterie-adjacent plates, this wine will make it better.
The Bottom Line
Bar Gemini is the rare place where a ten-bottle list feels like an achievement rather than a limitation — every pour is deliberate, pricing is shockingly fair, and the selection reads like a natural wine obsessive's notebook. Yes, send your friends here. Make them order the Hungarian red.

Progress isn't trying to be the biggest wine list in San Francisco — it's trying to be the most interesting one, and it largely succeeds. If you want Napa Cab and familiar labels, go somewhere else; if you want to drink Grignolino and Furmint with dinner and feel genuinely good about the prices, this is your room.
