The wine list at Aioli reads like it was assembled by a distributor rep on autopilot — safe, recognizable labels that won't scare off the Palm Beach lunch crowd. Nothing here screams excitement, but nothing screams disaster either. It's the wine equivalent of a navy blazer: appropriate, forgettable, and probably overpriced.
The list leans heavily on crowd-pleasing regions — California Chardonnay, Napa Cab, maybe a Sancerre and a Chianti for the table that wants to feel adventurous. We're guessing a handful of Italian whites, some Provençal rosé for the patio set, and a token Super Tuscan. Depth? Not really. You'll find the usual suspects from Sonoma and a few Bordeaux names at Palm Beach markups. This is a list built for tourists and regulars who order "the Pinot Grigio" without asking which one.
Expect six to eight pours that cover the basics: a crisp white, a buttery Chardonnay, a light red, a bigger red, maybe a Prosecco. Rotation feels nonexistent — these are the same wines they poured last season and will pour next season. Staff can tell you if it's dry or sweet, but don't expect vintage knowledge or regional context.
