The list at Florie's opens with exactly the confidence you'd expect from a restaurant inside The Four Seasons Palm Beach — clean, California-forward, with enough French muscle to keep things honest. At 200-300 selections, it's not a sprawling cellar, but it's curated with clear intention. The Wine Spectator Award of Excellence since 2024 checks out the moment you start flipping through.
California and France are the twin engines here, and sommelier Sam Scales clearly knows which lanes to drive in. You'll find heavy hitters like Opus One and Far Niente Chardonnay anchoring the Napa side, with Jordan and Caymus offering slightly more approachable entry points. On the French side, Domaine Drouhin and Louis Jadot Pouilly-Fuissé give the list some Burgundian backbone without going full rabbit hole. The gap is anything outside those two regions — don't come here hoping for Ribera del Duero or Sicilian skin-contact stuff.
With 20-35 pours available by the glass, this is a genuinely strong BTG program for a hotel restaurant. Prices run $14-$30 a glass, which is the going rate for Palm Beach, though the top end stings a little. Château Miraval Rosé by the glass is a smart addition for the crowd that lives on a boat and dines on a terrace.
Jordan Winery Cabernet Sauvignon — $60+
Jordan is a reliable, crowd-pleasing Sonoma Cab that drinks above its price point — and at the lower end of Florie's bottle range, it's the smart move before you start eyeing the Opus One.
Louis Jadot Pouilly-Fuissé
Most tables here are ordering Chardonnay from Napa and ignoring this Mâconnais gem entirely. Pouilly-Fuissé gives you the weight and texture of a nice white Burgundy without the Grand Cru price tag — it's quietly the best white on the list for the money.
Opus One
Opus One is a legitimately great wine, but it is never, ever a value at a restaurant — and at a Four Seasons in Palm Beach, the markup is going to hurt. You're paying for the name, the label, and the address. Order the Jordan and save the Opus One for a night when someone else is signing the check.
Far Niente Chardonnay + Grilled Branzino
Far Niente's Chardonnay is buttery and full without being a caricature — it can stand up to the char from the open-fire kitchen while keeping pace with the delicate fish. It's the obvious call here and it's obvious for a reason.

Florie's is a reliable, well-run wine program with a knowledgeable sommelier and a list that knows its strengths — just don't expect adventure or aggressive pricing. If you're in Palm Beach and want a glass of something good with excellent food, Sam Scales has your back.
