The wine list at 111 Chop House Bar arrives like a greatest hits album of California Cabernet — Opus One, Insignia, Shafer Hillside Select, Stag's Leap Cask 23, all in a row. It's undeniably impressive on paper, and clearly aimed at someone who wants to spend serious money on a serious bottle. The vibe is unapologetically old-school steakhouse: if you know what you want, you'll find it here.
Seventy-five labels sounds like a lot until you realize roughly half of them are Napa Cabernet or close cousins — Paso Robles, Sonoma, and a handful of California blends rounding out the domestic heavy side. The European contingent is curated but thin: Tignanello, Ornellaia, Ceretto Prapò Barolo, a Guigal Côte Rôtie, and two Châteauneuf-du-Papes in Vieux Telegraphe and Beaucastel. That's a respectable gesture toward the Old World, but Burgundy is a ghost town here — not a single producer in sight. White wine is an afterthought at a place like this, and the list treats it accordingly.
Thirteen by-the-glass options is a decent count for a bar program, and Rombauer Carneros Chardonnay at $17 a glass gives you a reliable crowd pleaser right out of the gate. The glass list skews predictably — expect the usual suspects rather than anything that'll make you stop mid-sip. Rotation appears minimal; what's on the printed list is likely what's been on the printed list for a while.
Grgich Hills Chardonnay Napa 2023 — $40/bottle
At $40 a bottle, this is the one quiet over-achiever on the list. Grgich Hills is a legitimate Napa institution making serious, old-school Chardonnay, and at this price point in a steakhouse setting it's practically a gift. Order it while people at the next table are dropping $400 on Opus One.
Vieux Telegraphe Chateauneuf du Pape 2023
Most people scanning this list are locked onto California reds before they even get halfway down the page. Vieux Telegraphe at $115 is a Rhône benchmark — structured, complex, and a genuinely different experience than the Cab parade surrounding it. It also happens to be one of the best pours on the entire list.
Silver Oak Napa Cabernet 2020
At $180 a bottle, Silver Oak is carrying a markup that makes the math painful — you can find this bottle at retail for around $75-$80. It's a fine wine, but it's also one of the most widely distributed Napa Cabs in existence, and you're paying a premium largely for the name recognition. Nearly everything else on this list gives you more for the same money.
Shafer 'Relentless' Napa 2021 + Dry-Aged Prime Ribeye
Relentless is Shafer's Syrah-Petite Sirah blend — dense, dark-fruited, and built for exactly this moment. The fat and char on a dry-aged ribeye needs something with real muscle behind it, and Relentless has the structure and concentration to meet it head-on without getting steamrolled.

111 Chop House Bar is doing exactly what it set out to do — give Worcester a place to order trophy Napa bottles alongside a prime cut. The markups sting and the list won't surprise anyone, but if you know what you're looking for, you'll find it.
