The list punches well above the restaurant's price point and casual vibe. Greek varieties — Xinomavro from Thymiopoulos, Savatiano from Papagiannakos, Notios Red from Gaia — anchor the program and give it a genuine identity that matches the kitchen. Beyond Greece, there's a thoughtful international spread: La Chablisienne Chablis for acid lovers, Guigal Côtes du Rhône for the GSM crowd, Torbreck Struie for Barossa faithful, and even an Assyrtiko from Jim Barry in Clare Valley, which is exactly the kind of left-field pick that earns respect. The list isn't deep — 31 labels is compact — but almost every slot is earning its place.

Savatiano is one of Greece's most underrated whites — citrusy, clean, and built for food. Old vines from Papagiannakos is a serious producer making a wine that would cost significantly more if it had a French appellation on the label. Order it with hummus and don't look back.
Jim Barry 2023 Assyrtiko Clare Valley
Assyrtiko grown in Australia's Clare Valley is a genuine curiosity — Jim Barry has been quietly producing one of the best non-Greek takes on the grape, and most diners here will walk right past it. It's minerally, dry, and cuts through rich mezze spreads better than anything else on the list.
Moët & Chandon NV Imperial Brut Epernay
Moët Imperial is fine, but it's the most marked-up name on any list it touches. There's nothing wrong with it, but in a restaurant with actual Greek variety and character to explore, defaulting to the world's most ubiquitous Champagne brand is a waste of a good wine list.
Thymiopoulos 2021 Young Vines Xinomavro Naoussa + Traditional Greek gyros
Xinomavro is often called Greece's Nebbiolo — high acid, firm tannins, earthy red fruit. Against a lamb or pork gyro with tzatziki, that acidity cuts the fat and the savory depth locks in with the spiced meat. It's the most Greek thing you can do at this table.

Yamas is a casual Greek eatery that has absolutely no business having a wine list this interesting — and we mean that as the highest compliment. If you're in Walla Walla and want to drink something genuinely unexpected without spending fine-dining money, this is your spot.
