The wine list here reads like a greatest hits album of American restaurant wine — you know every track, and that's exactly the point. Thirty-one labels, priced between $30 and $165, built squarely for the steak-and-a-bottle crowd. No curveballs, no obscure imports, just reliable names that most tables will recognize and order without blinking.
The list skews heavily Californian, with a particular emphasis on Pinot Noir — Meiomi, La Crema, Belle Glos, and Penner-Ash all make the cut, which actually gives you a decent ladder to climb depending on budget and ambition. Red blends get real estate too, with The Prisoner, Unshackled, and Orin Swift's 8 Years in the Desert all present, which steakhouse crowds tend to love. The white side is thinner and more utilitarian — Kendall Jackson Chardonnay and Kim Crawford Sauvignon Blanc are not exactly pushing anyone's boundaries, though White Haven SB and Ferrari Carano Chardonnay are respectable picks. There's no Cabernet depth to speak of beyond Rodney Strong, which feels like a genuine gap for a restaurant whose menu is presumably built around beef.

Don Miguel Gascon Malbec — $30
Gascon punches well above its price point — it's a full-bodied, fruit-forward Malbec from Mendoza that belongs on lists twice this price. At $30 a bottle in a steakhouse context, it's the easiest call on the menu.
Penner-Ash Pinot Noir
Most tables here are going to order The Prisoner or a Cab and move on, which means Penner-Ash — a serious Willamette Valley producer — often gets overlooked. At $95 it's the top of the Pinot ladder on this list, but it's actually the one bottle here with genuine winemaking ambition behind it.

At $95 a bottle, you're paying a significant premium for a wine that's available at most grocery stores and Total Wine for a fraction of that. The Prisoner is fine — flashy label, jammy fruit, easy to like — but there's no reason to pay steakhouse markup on something this widely distributed when Gascon or Unshackled does similar work for a third of the price.
Stag's Leap Wine Cellars Merlot + Rib Eye
Stag's Leap Merlot is plush and structured with enough dark fruit and backbone to hold its own against a well-marbled rib eye. It's a classic Napa pairing that doesn't need to be complicated — the wine rounds out the fat in the cut without getting lost in it.
The Bottom Line
Wyoming's Rib & Chop House isn't trying to win any wine awards, and it doesn't need to — the list does exactly what it's supposed to do for a steakhouse in Casper. Grab the Gascon, order your cut medium-rare, and don't overthink it.
