New Mexico's only speakeasy restaurant β you literally need a password to get in β and the wine list leans hard into its upscale steakhouse identity. The California-heavy lineup reads like a greatest hits compilation: Caymus, Silver Oak, Stag's Leap. It's familiar, it's comfortable, and if you love big Napa Cabs with your bone-in ribeye, you're going to be just fine here.
Selection Deep Dive
The list runs 80 to 120 bottles and stays firmly planted in California, with a particular affection for Napa Valley Cabernet Sauvignon. You'll find Caymus, Jordan, Silver Oak, and Stag's Leap Wine Cellars in the red column, and Rombauer and Cakebread anchoring the whites β these are crowd favorites for a reason, but don't expect any curveballs or regional exploration. There's no detour into Burgundy, no RhΓ΄ne curiosity, no domestic outliers from Oregon or the Finger Lakes. The Wine Spectator Award of Excellence since 2020 is well-earned within this lane, but the lane is narrow.

With 10 to 16 options by the glass at $10 to $18, the pour selection mirrors the bottle list β California-forward and recognizable. It's a solid range for a steakhouse crowd, though don't expect the list to rotate much or surprise you with anything off the beaten path. Jordan consistently overdelivers for its price point β elegant, structured, and a natural fit for red meat. If you're going glass-by-glass through dinner, this is where to start and possibly finish.
Duckhorn Merlot
Everyone's reaching for the Cabernets, and the Duckhorn Merlot gets overlooked as a result. It's a genuinely serious wine from one of Napa's best Merlot houses β richer and more textured than its reputation suggests, and worth your attention at this table.
Rombauer Chardonnay
Rombauer is everywhere, and it's everywhere for a reason β people love it. But at a steakhouse markup, you're paying a premium for a wine you could grab at any grocery store for half the price. It's not a bad wine; it's just not a good value here.
Stag's Leap Wine Cellars Cabernet Sauvignon + 20-ounce USDA Prime Center-Cut Bone-In Ribeye
Stag's Leap built its reputation on structured, polished Napa Cab with enough acidity to cut through fat β which is exactly what you need when you're 12 ounces into a 20-ounce bone-in ribeye. This is the pairing the list was designed for.

Vernon's Speakeasy earns its Wild Card badge not from the wine list's adventurousness β it's anything but β but from the sheer novelty of drinking Napa Cab in a password-protected speakeasy in the middle of New Mexico.
