You walk into what looks like a breezy farm-to-table spot and then the wine list lands on the table — Linne Calodo, L'Aventure, Epoch, Booker. This isn't a restaurant that grabbed whatever the local distributor pitched. Someone actually curated this thing.
The list runs 50-80 labels deep and stays almost entirely within Paso Robles, which sounds limiting until you remember that Paso Robles is one of the most exciting AVAs in California right now. Tablas Creek's Côtes de Tablas Blanc keeps things bright and Rhône-leaning on the white side, while Linne Calodo, L'Aventure, and Booker represent the region's bolder, Syrah- and Cabernet-forward identity on the reds. Epoch Estate adds a more polished, terroir-driven anchor. The list doesn't try to be everything — it tries to be the best of one very good place, and that's the right call.
Somewhere between 10 and 16 pours by the glass, priced in the $14–$20 range, which is honest money for wines of this caliber in a market where lesser bottles routinely hit $18 a pour. The glass selection seems to track the bottle list in terms of regional focus, so expect Rhône varieties and Paso Cab blends rather than a safe Pinot-and-Chardonnay fallback rotation.
Tablas Creek Vineyard Côtes de Tablas Blanc — $14–$20/glass
Tablas Creek's Côtes de Tablas Blanc — a Grenache Blanc, Roussanne, and Viognier-based white — normally commands respect at retail. Getting it by the glass at Thomas Hill's price point, with a seasonal farm menu to run it against, is the move.
Epoch Estate Wines
Booker and L'Aventure get all the social media buzz in Paso, but Epoch quietly makes some of the most site-expressive, structured wines in the region. Most diners walk past it on the list and reach for a name they recognize — don't be that person.
Booker Wines
Booker is great wine, full stop — but it's also one of the most recognizable names on the Paso circuit and gets allocated accordingly. If the markup reflects that hype premium, your money goes further elsewhere on this list.
Linne Calodo + Grass-fed organic steak
Linne Calodo's Rhône-inflected blends — think Mourvèdre and Syrah with real structure — are built for exactly this: charred, mineral-forward red meat from a farm that actually raises the animal right. The wine's savory edge meets the steak halfway.
🎲 The Bottom Line
Thomas Hill Organics is a taco joint with a Burgundy cellar situation — except it's a farm-to-table bistro with a Paso Robles all-star list. If you're eating in downtown Paso and you care about what's in your glass, this is your table.

Granada Bistro earns its place on the Paso Robles wine circuit — fair pricing, a genuinely local-focused list, and a bottle deal that's hard to argue with. It's not the deepest list in wine country, but it's an honest one, and that counts for a lot when you're already surrounded by the producers on the menu.

The Gold Rush Steak House is a nostalgic, only-in-California experience where the décor and the prime rib are the stars — the wine list is a supporting character that does its job without embarrassing itself. If you're in it for the food and the atmosphere, you'll drink fine; if you're here for the wine, you're in the wrong zip code.

The markup keeps it from being a destination wine experience, but if you're already staying at the Allegretto, this is absolutely where you're drinking tonight.

The Spoon Trade has no business being this thoughtful about wine for a casual beach-town comfort food spot, and that's the whole point. If you're in Grover Beach and want a genuinely local glass with your fried chicken, this is a better bet than anything with a bigger wine list and a worse sense of place.
