Walking into Thirsty Owl Saratoga, the list reads like a love letter to the Finger Lakes — and that's not a bad thing. This is the winery's own outpost, so you're getting their full portfolio front and center rather than a curated hodgepodge of random imports. It's a focused, mission-driven list, which either excites you or sends you looking for a Burgundy menu elsewhere.
The backbone here is Thirsty Owl's own estate wines from the Finger Lakes — their Pinot Gris, Riesling, and Cabernet Franc anchoring a list that also reaches into California and France for some variety. Don't expect a deep dive into Rhône producers or esoteric Jura pours; this isn't that place. What you do get is a genuinely well-represented New York State selection that most restaurants in the region wouldn't bother putting together. The California and French additions feel more like supporting cast than headline acts, filling out the list without adding much personality.
With 20 to 35 pours available by the glass, this is legitimately one of the more generous BTG programs in Saratoga Springs. The emphasis skews heavily toward their own estate bottles, so you're going to be spending a lot of quality time with Thirsty Owl's Finger Lakes lineup — which, for the record, is exactly the point. Rotation isn't well-documented publicly, so what you see on the chalkboard is likely what's been sitting there a while.
Thirsty Owl Riesling — $12
Finger Lakes Riesling is one of the most underpriced wine categories in the country, and getting it poured from the source — at a casual bistro by the glass — is a genuine steal compared to what you'd pay for comparable quality from Alsace or the Mosel.
Thirsty Owl Cabernet Franc
Most people cruise right past the Cab Franc and head for whatever California red is on the list. That's a mistake. Finger Lakes Cab Franc has a lean, herbaceous, Loire-adjacent quality that the region does better than almost anywhere else in the US — and here you can get it poured from the estate that grows it.
Thirsty Owl Pinot Gris
It's fine — perfectly drinkable — but Pinot Gris tends to be the most anonymous wine in the Thirsty Owl portfolio. When you're sitting at a Finger Lakes-focused wine bar with Riesling and Cab Franc on the menu, spending your pour on the Pinot Gris feels like ordering the house salad at a steakhouse.
Thirsty Owl Riesling + Cheese and Charcuterie Board
Off-dry Finger Lakes Riesling and a well-built charcuterie board is basically a cheat code — the acidity cuts through fatty cured meats, the slight sweetness plays off aged cheese, and neither element overwhelms the other. It's the easiest call on the menu.

If you're in Saratoga and want an honest, unpretentious look at what the Finger Lakes can do, Thirsty Owl earns the stop — especially on the patio in the warmer months. Just go in knowing this is a winery showcase, not a global wine bar, and you'll leave happy.
