Wingman Metrics
You walk into what looks like a breezy Key West raw bar — casual, compact, smelling of brine and lime — and then the wine list lands on the table. Fifty-seven labels is not what you expect here. There's Billecart-Salmon next to $12 Cava, and a Bollinger sitting quietly above the oyster menu like it knows something you don't.
The list punches well above the room's weight class. Sparkling wines anchor the top of the card with real range — Castellar Cava for the table-round pour, Delamotte Blanc de Blancs and Bollinger Special Cuvée for the serious sipper. Whites lean into Napa (Groth, Shafer Red Shoulder Ranch) and there's a Domaine Andre Vatan Sancerre that has absolutely no business being this good of a call in a Florida beach town. The Pinot Noir corner with Dumol Wester Reach and Ken Wright single-vineyard bottles signals someone on the sourcing side knows their West Coast. Gaps exist — very little Old World red, no Italian whites to speak of — but for a raw bar, this is a quietly impressive effort.
Thirteen options by the glass at $12–$13 a pop is a reasonable deal in a town where resort markup is the norm. The Castellar Cava and Henri Gaillard Rosé from Provence are the obvious plays with shellfish. We'd love to see the list rotate more aggressively, but what's here gets the job done without embarrassing anyone.
Castellar Cava Sparkling NV, Peñedès, Spain — $12
Twelve dollars for a proper Cava while eating fresh oysters in Key West is about as good as it gets. This is the move for anyone who wants bubbles without commitment.
Domaine Andre Vatan Sancerre, Loire Valley
Nobody comes to a raw bar in Key West expecting to find a serious Sancerre from one of the appellation's most respected family producers. Crisp, mineral, and built for seafood — this bottle is flying under the radar and it shouldn't be.
Bollinger Brut Special Cuvée Champagne NV
At $215 a bottle with no retail anchor to compare against, this is a steep ask in a casual space with no sommelier to guide the experience. Bollinger deserves better context than a picnic table vibe — save it for somewhere that earns it.
Graham Beck Brut Rosé Sparkling NV, South Africa + Fresh oysters
Graham Beck's Brut Rosé has just enough acidity and red-fruit tension to cut through the brine and fat of a cold half-shell without bullying it. Classic combo, and at $13 a glass, you can afford to order a second round of both.
🎲 The Bottom Line
Thirsty Mermaid is a Wild Card in the best sense — a no-frills raw bar that somehow sourced a wine list worthy of a much fancier room. The markups on the high-end bottles are steep and there's no wine program energy to speak of, but the Cava-and-oysters combination alone is worth the stop.
Duval Street / Old Town · Key West · Seafood / New American
Bagatelle is doing more with wine than most restaurants in the Keys bother to attempt, and for a tourist-heavy Duval Street address, that matters. The markups are real and the list skews safe-prestige, but if you're in Key West and want a proper bottle with your lobster, this is where you go.

Matt's is the wine list equivalent of a reliable vacation — it won't blow your mind, but it won't ruin your evening either. Order the Albariño, watch the boats, and save the wine exploration for somewhere that's actually trying.

The Roost is a hotel bar doing more than the minimum — there's real range here and a few genuinely good picks if you know where to look. Just go in expecting to pay for the waterfront zip code, and you'll have a fine time.

Moondog isn't a wine destination, and it doesn't pretend to be — but it offers a surprisingly considered little list at prices that don't insult your intelligence, which puts it well ahead of the tourist-trap cafes clustered around it. If you're in Old Town and want a glass with your morning or a light lunch, there are worse decisions you'll make in Key West.

Azur punches above its size in a tourist-heavy town that could easily coast on mojitos and house pours. The markups aren't shy, but there's a real list here with a sommelier behind it — send a friend, order the Télégramme, and let Key West happen around you.
