The Still knows exactly what it is — a whiskey and steak joint — and the wine list reflects zero ambition beyond that. You flip to the wine page and immediately sense that nobody here lost sleep over it. It reads like someone grabbed whatever was on sale at Total Beverage and called it a program.
We're talking a handful of labels that you'd recognize from a gas station cooler: Josh Cellars, Apothic Red, Kim Crawford, Francis Coppola's mid-tier Diamond Collection. There's no regional identity, no interesting producers, and zero evidence that anyone with wine knowledge touched this list. The one outlier is a Belle Glos Pinot Noir, which sticks out like a sports car in a parking lot full of rental sedans — and is priced more reasonably than everything else here, which tells you something. If you came for wine discovery, you came to the wrong place.
Glass pour options are likely a token house red and house white situation — exact pours aren't documented, but given the list, we're not expecting any surprises. If they're pouring Apothic Red by the glass, that's a $9 retail bottle dressed up in a steakhouse suit. Order the whiskey instead.
Belle Glos Balade Pinot Noir 2021 — $65
At a 44% markup over a $45 retail price, it's the only bottle on this list that isn't highway robbery. It's still pricey, but relative to everything else here, it's the one pick that won't make you wince when the bill arrives.

Most people at a steakhouse reach for the Cab, so this Santa Barbara Pinot gets ignored. It's actually the best-priced bottle on the list and holds its own against a good cut of beef.
Apothic Red Winemaker's Blend NV
A 191% markup on an $11 grocery store blend. This bottle costs less than a streaming subscription at retail and they're charging $32 for it. Hard pass.
Belle Glos Balade Pinot Noir 2021 + Filet Mignon
A leaner cut like a filet doesn't need a monster Cab — the Belle Glos has enough dark fruit and structure to complement the beef without bulldozing it, and it's the only bottle on this list worth ordering with your steak.

The Still is a genuinely fun spot for whiskey and red meat, but the wine list is a clear afterthought — overpriced grocery store bottles with no story to tell. Order a pour from their whiskey program and save the wine night for somewhere that cares.

Bistro Nautile is a genuinely appealing restaurant let down by a wine list that plays it safe with familiar labels and then charges aggressively for the privilege. Drink by the glass, stick to the interesting outliers, and don't let the French bistro atmosphere talk you into a $68 bottle of Daou.

Coyote's isn't a wine destination, and it doesn't pretend to be — but the pricing is fair, the Wednesday deal is genuinely excellent, and there's nothing actively wrong here. Show up on a Wednesday, order a bottle of Pinot Grigio for $19.50, and focus on the burrito.

CooperSmith's is a genuinely great Old Town brewpub, and if you're here for a pint of their award-winning craft beer, you're doing it right. The wine list exists because restaurants feel obligated to have one, not because anyone here cares about it — order a beer.
