Walking into The Republic, the wine list feels like it means business β 300-plus selections in a college town is a statement, not an accident. This is the kind of list that makes you slow down and actually read it. Wine Spectator has handed them a Best of Award of Excellence since 2022, and you can feel why the moment you flip past the first page.
The spine of this list is California Cabernet, and it's stacked: Caymus, Silver Oak, Jordan, Paul Hobbs, Stag's Leap, Chateau Montelena, and Opus One all show up, covering everything from weeknight splurge to full occasion territory. France gets serious representation too β Chateau Margaux is on here, which is not something you find at most steakhouses east of Dallas. Italy punches in with Sassicaia and Tignanello, rounding out a triumvirate of regions that Wine Spectator specifically called out as strengths. The gaps are real β Burgundy fans may feel underserved and there's not much adventure outside the classic steakhouse power corridor β but within those lanes, the depth is genuine.
Twenty to thirty-five pours by the glass is a robust program for any steakhouse, and the $12β$25 range suggests they're not just pouring commodity wine to fill the slots. With a full sommelier team on staff, rotation and curation are more likely here than at most spots that just set the list and forget it. If you're flying solo or want to graze across the list, the by-the-glass program gives you real options.
Jordan Vineyard & Winery Cabernet Sauvignon β $50β$80 estimated
Jordan is consistently one of the better-value Napa Cabs on any list β elegant, food-friendly, and priced below the prestige bombs. On a list where Opus One is sitting nearby, Jordan is where you eat well and still pay your rent.
Chateau Montelena Chardonnay
Everyone comes here for the Cabs, and Montelena Chardonnay gets ignored as a result. That's a mistake. This is the winery that beat the French at their own game in 1976, and their Chardonnay is restrained, mineral-driven, and serious β not the butter-bomb that most steakhouse Chards turn out to be. Order it before the ribeye arrives.
Caymus Vineyards Cabernet Sauvignon
Caymus is on every steakhouse list in America for a reason β people know the name and order it on autopilot. That demand means it's almost never a good value, and at a restaurant with Silver Oak, Paul Hobbs, and Jordan all available, there are better Cabs at every price point. Skip the reflex pick.
Sassicaia + Prime dry-aged ribeye
Sassicaia's structured tannins and dark fruit cut right through the fat on a dry-aged ribeye without overwhelming it β it's a Tuscan wine built for red meat, and the char and mineral notes on both sides amplify each other. This is the splurge pairing that justifies the whole night.

The Republic is the best wine program in a 100-mile radius, full stop β a serious sommelier team, a list that can hold its own against Houston steakhouses, and a room that treats the bottle with the same respect it gives the beef. Yes, pricing runs steep, but if you're eating a dry-aged ribeye in College Station, you already knew this wasn't going to be a cheap night.

Pablo's is a solid taco spot that treats wine as a legal obligation rather than a point of pride. Order the margarita, enjoy the tacos, and if you must have wine, grab the Masi and call it a night.
