In Birmingham, where most bistro lists default to the usual Kendall-Jackson suspects, seeing a natural wine focus with real range is worth a double-take.
Selection Deep Dive
The list runs 50-80 bottles deep and leans into natural and low-intervention producers โ not as a trend, but as a genuine point of view. You'll find Riesling and Sauvignon Blanc holding down the white side with solid regional variety, while the bottle range from $38 to $120 keeps things accessible without feeling like a corner-cut. The inclusion of Valdespino Cream Sherry is a sharp move โ it signals someone on the team knows that great wine isn't always red and doesn't always need a dinner course.
