The wine list at Sybaris Bistro is exactly seven bottles long, and every single one of them is a dessert wine or fortified pour. That's either a bold editorial statement or a complete accident — and honestly, we're leaning bold. When a fine dining spot in a college town doubles down on Tawny Porto and Madeira instead of chasing a safe Cab-Chardonnay list, you pay attention.
This is not a list built for everyone, and it knows it. The Port selection alone spans three tiers of quality and age — from the approachable Quinta do Noval 10-Year Tawny at $10 a glass all the way up to Graham's 40 Year Tawny at $32, with Penfold's Grandfather Rare Tawny sitting in the middle as the conversation piece. The lone Madeira — Blandy's 5-Year Bual — is a welcome nod to one of the most underappreciated wine categories on the planet. The Elio Perrone Sourgal Moscato d'Asti 2018 rounds things out on the lighter end, adding a fizzy, low-alcohol option for those who want something sweet but not serious. Yes, the list is tiny. But within its narrow lane, it's genuinely considered.
Five of the seven wines are available by the glass, ranging from $9 to $32, which means you can essentially drink the whole list without committing to a bottle. That's the right call for a program this specialized — most people aren't buying a bottle of 40-Year Tawny. The glass price on Graham's 40 Year at $32 is steep but defensible given what's in the glass.
Blandy's 5-Year Bual Madeira — $9/glass
Nine dollars for a legitimate Madeira is borderline absurd. Blandy's is one of the great Madeira houses, Bual sits in the sweet-but-not-cloying zone, and this is the kind of wine most restaurants don't even attempt to carry. At this price, order it before you order dessert.
Elio Perrone Sourgal Moscato d'Asti 2018
Everyone sleeps on Moscato d'Asti because they associate it with grocery store sweetness, but Elio Perrone is one of the producers who makes the category worth taking seriously — lower alcohol, fine bubbles, actual complexity. If you came in thinking Port wasn't your thing, this is your move.
Graham's 40 Year Tawny Porto
The wine itself is spectacular — Graham's 40 Year is legitimately world-class. But at $32 a glass with no bottle option visible, it's a lot to spend in a bistro setting when the Penfold's Grandfather Rare Tawny is sitting right there at $21 and will floor most people. Unless you specifically came for this pour, let the Penfold's do the work.
Quinta do Noval 10-Year Tawny Porto + Cheese Course
A 10-Year Tawny from Quinta do Noval has just enough nuttiness and dried fruit to handle a well-aged hard cheese without overwhelming it. It's the classic pairing for a reason, and at $10 a glass, it's the easiest upgrade on the table.
The Bottom Line
Sybaris Bistro's wine list is seven bottles of pure intention — if you came for Pinot Grigio, you're in the wrong place, but if you're even slightly curious about fortified wines, this tiny list in Corvallis is worth your time and your $9. Send a friend who thinks they don't like Port.
