Walk into STK Scottsdale and the wine list feels exactly like the room — polished, confident, and built to impress without taking too many risks. It's a greatest hits compilation of California heavy-hitters, and honestly, there's nothing wrong with that if you know what you're ordering. Wine Spectator has recognized this list with an Award of Excellence since 2021, and you can see why — the bones are solid.
The list runs 150-250 bottles deep and plants its flag firmly in California wine country — Napa Cab is the obvious center of gravity here. You've got the full murderers' row: Caymus, Silver Oak, Stag's Leap, Jordan, Opus One, Far Niente, and Peter Michael all show up, which is reassuring if you're here with clients or a date who knows their Napa. What's missing is any real adventure — don't come looking for Jura, Ribera del Duero, or anything that requires a conversation. This is a list built for people who already know what they want, and that's fine, but it tops out there.

In a room full of Napa Cab heads, Flowers Sonoma Coast Pinot gets overlooked. It's cooler-climate, more precise, and a genuinely interesting detour from the big reds dominating every other table.

It's Opus One at a trendy steakhouse — you're paying a significant premium for the name and the flex. The wine is great, but the markup at a spot like this makes it a tough sell when Jordan and Stag's Leap are sitting right next to it on the list.
Duckhorn Vineyards Merlot + Bone Marrow Flan
Duckhorn Merlot has enough richness and dark fruit to stand up to the deep, fatty intensity of the bone marrow flan without bulldozing it. It's a more elegant call than reaching for the biggest Cab on the list.
