STK rolls in with 120 labels on paper, which sounds impressive until you start reading the names. This is a greatest-hits playlist of wines that sell themselves — no curation required, no staff expertise needed. The list is designed for brand recognition, not discovery.
The white wine section is Chardonnay-heavy in the most predictable way possible: Rombauer, Sonoma-Cutrer, Bezel from the Cakebread Family — all solid producers, all wines that could be on the menu of any upscale chain from here to Miami. Sauvignon Blanc gets three slots (Kim Crawford, Twomey, Cloudy Bay), which is fine but reads like a spreadsheet of airport duty-free options. The red wine program leans hard on Napa Cabernet with Bonanza, Decoy, Serial, and Caymus filling the entry-to-mid tier — again, crowd-pleasers with healthy margins. What's largely absent is any real Old World depth, minimal Pinot Noir representation, and essentially zero adventurous selections that would suggest anyone actually cared about building this list.
Three by-the-glass options at a steakhouse with 120 bottles is borderline insulting. That's not a by-the-glass program — that's a placeholder. At $9/glass we don't have visibility into what those three pours actually are, but the depth clearly ends at the bottle list.
The Bottom Line
STK San Francisco has the bones of a wine program and the ambition of a hotel minibar. With only three by-the-glass pours, a list built entirely around safe brand names, and steep markups baked into the concept, this is a place to order a cocktail or splurge on a specific bottle you already know you want.
