Wingman Metrics
The SkyFire bar list is compact — 26 labels, all by the glass — which is either a bold editorial choice or a constraint dressed up as one. What earns it immediate respect is the range: New Mexico sparkling, Champagne heavyweights, a Chablis premier cru, and not one but two zero-proof options that don't feel like afterthoughts. For a resort lounge in Santa Fe, that's more intentional than you'd expect.
The list is structured cleanly across sparkling, white, rosé, and red categories, with the sparkling section doing the heaviest lifting. New Mexico's own Gruet shows up in two expressions alongside Laurent-Perrier, Veuve Clicquot, and Billecart-Salmon — that's a real range from $14 to $40 a glass without a dud in the lineup. Whites lean toward crisp and coastal: a Pazo das Bruxas Albariño from Galicia, Pascal Jolivet's Sancerre-adjacent Sauvignon Blanc, and the Raoul Gautherin Vaillons 1er Cru Chablis anchor the white section with some genuine ambition. The Bishop's Lodge house labels — a Blanc and a Noir — add a proprietary touch, though provenance details are thin. Reds are underrepresented with only a handful of options visible, but Flowers and Merry Edwards Pinot Noir are credible West Coast picks.
Every single wine on this list is available by the glass, which is the whole point here — this is a bar lounge program, not a cellar. Prices run from $12 for Martinelli's sparkling cider up to $55 (implied ceiling), with the Merry Edwards Pinot Noir topping out at $45 a glass. Rotation is unclear, but the structure feels curated rather than random, with intentional escalation within each category.
The Bottom Line
SkyFire's bar list is small but surprisingly self-aware — the Gruet duo gives it local credibility, the Billecart-Salmon and Gautherin Chablis give it real range, and the zero-proof inclusions show someone actually thought about the full table. Markups trend steep as expected for a resort property, so pick your spots wisely. If you're settling in for a high desert sunset, start with the Gruet and let the list earn your next pour.

Downtown/Plaza · Santa Fe · Winery Tasting Room with Light Bites
A single-producer tasting room shouldn't make this strong a case for itself, but Gruet earns it — absurdly fair pricing, genuinely interesting bubbles, and a concept that reminds you New Mexico is quietly doing something special. If you're in Santa Fe and skip this, that's on you.

Noisy Water's Santa Fe tasting room is the Wild Card badge made flesh — a downtown spot doing something genuinely regional and proudly weird that you won't find replicated anywhere else. Send a curious friend, not a Bordeaux purist.

Hervé is exactly what it is — a polished, single-producer showcase that happens to be one of the more honest wine programs in Santa Fe. If you're open to letting New Mexico terroir surprise you, this is worth the stop; if you came looking for Burgundy, you're at the wrong address.

Joseph's is the kind of place that earns a double-take — a cozy pub on Agua Fria with a sommelier, a real wine list, and enough range to reward curiosity. We'd absolutely send a friend here for wine, especially if duck confit is on the menu that night.

Downtown · Santa Fe · Spanish tapas and wine bar
Taberna La Boca is doing something genuinely rare in Santa Fe: building a wine program with a real point of view. It's not perfect — the curation could go deeper and the staff knowledge is hit or miss — but the commitment to Spanish and Mediterranean wines in a tapas context is exactly right, and the Wild Card badge is earned.

Terra is what a luxury resort wine list looks like when the hotel actually tried — proper storage, a real sommelier, and some legitimately good producers on the page. The markup is what it is, and there's no getting around it, but if you're already spending a night at the Four Seasons, this is not the place to order a cocktail and ignore the wine list.

· East Hampton · Restaurant
The Palm East Hampton is a strange and quietly wonderful anomaly: a legacy steakhouse chain running a six-bottle all-natural wine list priced like it forgot to account for zip code. If you are open to something unexpected and don't need your hand held, the Crochet Sancerre alone is worth the stop. Just don't come hoping for a deep cellar or a glass pour.

The Palm Nashville's wine list is six bottles long and somehow more interesting than lists ten times its size at comparable restaurants. The Sancerre alone is worth the visit if it's still priced at $23. Just know what you're walking into: this is a focused, opinionated micro-list, not a deep cellar — and by-the-glass options remain a mystery until you ask.

The Palm Midtown is not where you'd expect to find Puzelat and Ruth Lewandowski sitting next to each other on a wine list — which is exactly what makes it worth a second look. Six bottles is a short menu, but all six are defensible picks at prices that don't insult you. If you're in the mood to trust the list and not overthink it, this works.
