The wine list at SingleThread arrives like the rest of the meal — with intention and a little theater. You're handed a curated shortlist for the evening, but behind it sits a cellar of 1,800 labels that can be unlocked on request. This is not a place that leaves wine as an afterthought.
The full list is a serious document — Burgundy and Champagne anchor the old-world side, with Grower Champagne and German Riesling offering more texture than the usual luxury-restaurant defaults. Loire Valley shows up with enough range to signal that someone on staff actually cares about acid-driven whites. California is represented thoughtfully: Kistler earns its place, and local Sonoma producers get real shelf space, which feels right given the farm's roots. Austria rounds out a lineup that never feels like it was assembled by committee.

When Kistler is in the building and you have access to a cellar this deep, defaulting to a safe California Chardonnay without pressing the staff for specifics is a missed opportunity. The markup at this level is steep regardless, so if you're paying luxury prices, push past the obvious and ask what they're actually excited about right now.
Loire Valley white (Muscadet or Savennières) + Live Santa Barbara spot prawns
The briny, clean sweetness of live spot prawns needs something with real acidity and mineral drive — not oak, not weight. A Loire white from the cellar hits that mark cleanly, cutting through the richness without competing with the ocean-forward flavor of the prawn. It's the kind of pairing the staff here will get right if you ask them directly.
