Sixty-two labels at a Mediterranean restaurant in Walla Walla — that alone earns a second look. But what really stops you is the composition: pet-nat Picpoul, a Sicilian Malvasia, Corpinnat from a grower Cava producer, and local sparkling wine made by traditional method sitting alongside the expected Washington reds. This list has a point of view.
The list leans hard into the Pacific Northwest with serious representation from Walla Walla Valley, Columbia Valley, Eola-Amity Hills, and the Celilo Vineyard in the Columbia Gorge — but it doesn't stop there. Caravaglio's Malvasia from Salina IGP and the Domaine Miolanne Volcane Rouge (a Pinot Noir/Gamay from France) signal a kitchen that actually thinks about what wines complement its food. The sparkling section alone is worth the visit: Gramercy Cellars Pet-Nat Picpoul, Devium's traditional-method sparkler from Celilo Vineyard, and Huguet de Can Feixes Brut Nature from Corpinnat make this a fizz program most dedicated wine bars would envy. The gaps are modest — a little thin on Italian and Spanish still wines given the Mediterranean theme — but this is clearly a curated, intentional list, not a clipboard order from a distributor rep.
Eleven by-the-glass pours, all priced between $12 and $15, which is impressively restrained for 2024. The lineup spans white, rosé, orange, and red, with the Caravaglio Malvasia and the itä Winery Rosé of Primitivo standing out as genuine finds you won't see at most restaurants in any city. The Dunham Cellars Sauvignon Blanc at $13/glass and the Domaine Miolanne Volcane Rouge at $14/glass round out a roster that actually has something for everyone without defaulting to the obvious.
The Bottom Line
Saffron is doing something genuinely uncommon: running a 62-bottle wine list in wine country that actually reflects the cuisine it's meant to accompany, without gouging you on the glass pours. The by-the-glass pricing alone makes it worth stopping in even if you're not staying for dinner. If you're in Walla Walla and you care about wine, this list deserves more attention than the cellar-heavy steakhouses getting all the press.

Runway is a one-trick pony that actually knows its trick cold. If you want still wine, go somewhere else — but if you want to work through four different expressions of sparkling wine in one sitting with a focused, purposeful list, this is a legitimately fun stop in Walla Walla. The prices run steep for the producers involved, but the concept earns some goodwill for sheer commitment.

If you're in town for the Washington wine trail, this is the stop where you take a break from Cab and remember France exists.

If wine matters to your evening, you're better off grabbing a bottle from a nearby tasting room and asking about corkage.
