The list runs 150-250 bottles with a clear Napa Valley backbone and a solid Champagne lineup anchored by Taittinger, Veuve Clicquot Yellow Label, Charles Heidsieck, and Dom Perignon for the celebrators. Red wine depth leans heavily American — Frank Family Vineyards Cabernet Sauvignon and Belle Glos Clark & Telephone Pinot Noir are the crowd favorites, and they're here for a reason. Frank Family's Cab is built for exactly this moment — it's got the fruit weight and structure to stand up to a heavily marbled, butter-finished ribeye without getting lost. It's the most honest pairing on the menu.
