You're in a ski town, so a wine list anchored by Giacomo Conterno, Gaja, and Biondi-Santi is not what you expect โ€” but that's exactly what Rustico delivers. The list reads like someone actually loves Italian wine, not just someone who Googled 'Italian wine list template.' This is a serious cellar dressed up in mountain rustic clothing.

Rustico has held a Wine Spectator Best of Award of Excellence since 2003, and the list makes clear that's not a participation trophy. Piedmont is the backbone โ€” Barolo from Giacomo Conterno, Bruno Giacosa, and Gaja, plus Barbaresco from both Gaja and the more approachable Produttori del Barbaresco co-op. Most tables at Rustico are going straight for the Barolo or the Super Tuscans, which means Fontodi's Riserva gets overlooked. That's a mistake. Fontodi farms biodynamically in the Conca d'Oro, and their Riserva is as precise and age-worthy a Sangiovese as you'll find โ€” at a fraction of the Brunello prices on this list.

Sassicaia is a great wine โ€” nobody's arguing that โ€” but in a resort town restaurant at these markups, you're paying a significant premium on top of an already expensive bottle. Giacomo Conterno Barolo Monfortino + Bistecca alla Fiorentina

This is the pairing Rustico was built for. Monfortino's iron-fisted tannins and tar-and-rose structure need something big enough to stand up to them โ€” and a properly charred, thick-cut Fiorentina does exactly that. The fat renders, the char cuts through the wine's austerity, and suddenly you understand why Piedmont and beef have been inseparable for centuries.
