Walking into a Thomas Keller project in Yountville and finding a list that's almost exclusively Champagne takes a second to process — in the best way. This isn't a wine list so much as a manifesto: bubbles or go home. The room matches the ambition, intimate and unhurried, and the list follows suit.
The list is laser-focused on prestige Champagne, and it doesn't apologize for it. Krug Grande Cuvée, Dom Pérignon, Louis Roederer Cristal, Billecart-Salmon Blanc de Blancs — these are the headliners, and they're here because the program was built around them, not because someone bulk-ordered from a distributor catalog. Don't come looking for Burgundy or Cabernet; this is a single-region deep dive executed with real intention. The trade-off is obvious: if you want variety across wine styles, you're in the wrong lounge, but if you want to drink serious Champagne next to caviar, you're exactly where you should be.
Specific by-the-glass counts aren't publicly detailed, but a program this focused almost certainly pours several of its prestige cuvées by the glass — you don't build a lounge around Champagne and then force everyone into bottles. Expect the pours to be generous and properly cold, though the per-glass pricing will reflect the real estate these bottles occupy.
Billecart-Salmon Blanc de Blancs — null
In a lineup of trophy bottles, Billecart-Salmon's Blanc de Blancs is the most food-forward and least flashy pick — tight, precise, and built for caviar service without the prestige-label surcharge of Cristal or Dom. It's the move if you're paying attention.
Krug Grande Cuvée Brut NV
Most people walk past Krug's Grande Cuvée because it doesn't have a vintage year to brag about. That's their loss. This is one of the most complex non-vintage Champagnes made, and in a setting designed around serious eating and drinking, it outperforms bottles that cost twice as much.
Dom Pérignon Brut
Dom Pérignon is fine Champagne, but it's also the most recognizable label on the list, which means you're paying a meaningful premium for the name recognition. In a room full of equally serious bottles, the DP surcharge feels like the least interesting way to spend your money.
Billecart-Salmon Blanc de Blancs + Blini with Regiis Ova caviar
Pure Chardonnay Champagne and roe is one of the oldest pairings in the book for a reason — the wine's chalky acidity cuts through the salt and fat of the caviar without competing with it. On a blini, it's as close to a perfect bite-and-sip as this format allows.
🎲 The Bottom Line
Regiis Ova isn't trying to be a wine list — it's trying to be the best Champagne program in Napa, full stop, and it largely succeeds. If you're sending a friend here, make sure they know what they're signing up for: a focused, expensive, genuinely excellent experience built around one region and one purpose.
