The wine list at Prime reads exactly like you'd expect from an upscale Texas steakhouse — heavy California presence, familiar names, nothing that's going to surprise you. It's the kind of list designed to make ordering easy, not interesting. That's not necessarily a knock, but it does set expectations.
Napa and Sonoma do most of the heavy lifting here, with the usual suspects filling out the bottle list. Caymus and Jordan anchor the Cabernet section, which feels like it was curated by someone who asked 'what do steak people order?' and stopped there. There's no meaningful Old World presence to speak of, and if you're hoping for anything outside the California bubble — a Barolo, a Rhône, even a Washington Cab — you're likely out of luck. It's a competent list for this market, but it doesn't reach beyond its comfort zone.
The by-the-glass program runs 10 to 16 options and leans hard into crowd-pleaser territory — think Meiomi Pinot Noir and Rombauer Chardonnay, which are reliably crowd-pleasing but not exactly adventurous. Expect glass pours in the $12–$22 range with no real rotation or surprise additions. What you see is what you get, every visit.
Jordan Cabernet Sauvignon Alexander Valley — $65–$85 est.
Jordan consistently delivers for the price point and holds up well against the ribeye. It's the one bottle on this list that earns its place without making you feel gouged.
Rombauer Chardonnay Carneros
Most people grab this by the glass and move on, but ordering a bottle with the lobster tail is genuinely the right call. It's rich and buttery enough to stand up to shellfish without drowning it, and it's one of the more thoughtful matches on the menu even if it got here by accident.
Meiomi Pinot Noir
You can grab this at any grocery store for $15. Whatever they're charging here, it's not worth it. If you're ordering Pinot with a steakhouse menu, push the staff to find you something better — or just go with the Jordan.
Jordan Cabernet Sauvignon Alexander Valley + Prime Ribeye
Jordan's got the structure to cut through the fat and the fruit to complement the char. It's the classic call for a reason — and here, it's the right one.

Prime is a dependable spot for a steak-and-Cab dinner in McAllen — the wine list won't excite you, but it won't embarrass you either. If you go in knowing what you want, you'll leave satisfied; just don't come here hoping to discover something new.

Come for the view, order the Pinot, and if you can swing a Monday reservation, that half-price bottle program makes the whole experience considerably easier to love.
