You're in Woodinville wine country, surrounded by tasting rooms, and then you walk into Pintxo and realize this place is doing something genuinely different. The list is built around one family — Valdemar — but it spans two continents, and that concept is either going to hook you or confuse you. It hooks you.
The list is tight but intentional: old-world Rioja on one side, Washington State on the other, all under the Valdemar family umbrella. You've got Conde Valdemar Gran Reserva repping classic Spain, while Klipsun Vineyard Cabernet Sauvignon and Blue Mountain Vineyard Syrah fly the Columbia Valley flag. It's not a deep cellar — there's no hunting through 200 labels here — but every bottle earns its spot. The gap is obvious: if you want to venture outside the Valdemar portfolio, you're largely out of luck, and there's no real exploration of Ribera del Duero, Priorat, or broader Pacific Northwest producers to fill that void.
With 12 to 20 pours reportedly available, the by-the-glass program is one of the stronger selling points here. The Valdemar tasting flight — two Spanish wines and two Washington wines — is a genuinely smart way to understand what this place is about in a single sitting. Rotation details are hard to pin down, but the cross-continental concept gives the BTG program more range than the list size would suggest.
Valdemar Estates Columbia Valley Roussanne — null
Washington Roussanne is still flying under the radar nationally, and Valdemar's Columbia Valley version is a legit introduction to what the state can do with a grape most people associate with the Rhône. At a Spanish tapas bar, it's an unexpected overachiever.
La Gargantilla
Most people at this table are ordering the Gran Reserva or defaulting to something Washington, so La Gargantilla from the Valdemar Rioja portfolio gets passed over. Don't let that happen — it's a more approachable, food-friendly Rioja that works harder with the tapas than the bigger bottles do.
Conde Valdemar Gran Reserva
Not a bad wine by any measure, but Gran Reserva Rioja needs time and space to open up — neither of which a buzzy tapas bar really provides. You're paying for age and prestige, then drinking it in a loud room with patatas bravas. Save it for a longer dinner with proper breathing time.
Valdemar Estates Blue Mountain Vineyard Syrah + Spanish charcuterie and cheese board
Columbia Valley Syrah has the dark fruit and savory edge to cut through cured meats and hold its own against aged Spanish cheeses. It's a PNW bottle doing old-world work, which is exactly the crossover move Pintxo is built for.
🎲 The Bottom Line
Pintxo is a one-family wine show, and that's both its charm and its ceiling — but within those limits, it executes the Spain-meets-Washington angle better than it has any right to. If you're already doing Woodinville tasting rooms, this is the stop that actually makes you think.
