You walk into what looks like a bakery and leave having drunk a Domaine Edmond Cornu Pinot Noir from Burgundy — that's the Persephone move. The wine list is short enough to read in under a minute, but it earns every second of your attention. For a Jackson Hole café that's primarily known for its sourdough, this is a genuinely surprising wine program.
Under 15 bottles, but they're doing more with that constraint than most full-service restaurants do with 60. The list sweeps through Catalunya, the Loire, Alsace, Burgundy, Modena, and South Africa — with a clear tilt toward European producers who farm thoughtfully. The Podere il Saliceto Lambrusco Pet Nat from Modena and the Kuentz-Bas Alsace Blanc signal that whoever built this list has actual opinions. The one glaring gap is any domestic representation, but honestly, given what they've chosen to stock instead, we're not complaining.
Six pours by the glass, which is a solid ratio for a list this size — essentially the whole menu is accessible without committing to a bottle. Options rotate through sparkling, rosé, white, and red, so there's something for the croissant crowd at noon and the tartine crowd at 3pm. We'd like to see the pours rotate more seasonally, but what's here is genuinely well-chosen.
Domaine de Bernier Chardonnay, Loire, FR, 2012 — $24
Loire Chardonnay at $24 is a legitimate steal. This isn't the buttery, oaky California version — it's lean, mineral, and food-friendly in a way that works perfectly with café fare. At that price point in Jackson Hole, it's practically giving itself away.
Podere il Saliceto Lambrusco Pet Nat, Modena, IT, 2014
Most people see 'Lambrusco' and think cheap Italian red fizz from a screw-top. This is the opposite — a serious Pet Nat from one of Modena's most respected natural producers. It's funky, food-friendly, and exactly the kind of thing you discover at a place like Persephone and then spend months trying to find at home.
Krone Sparkling Rosé (Pinot Noir, Chardonnay), SA, 2014
At $34, the Krone sparkling rosé is the least interesting bottle on an otherwise interesting list. South African bubbly at that price competes against a lot of better options elsewhere on this very menu — the Suriol Cava Brut Nature does more for less, and the Pet Nat is a more compelling adventure.
Kuentz-Bas Alsace Blanc, Alsace, FR, 2014 + Seasonal tartine
Alsace Blanc — likely a blend of Pinot Blanc, Auxerrois, or similar — has the texture and subtle richness to hold up to whatever's on the tartine that day, whether it's something herby, creamy, or topped with smoked fish. It's a kitchen-flexible white, and Persephone's open-faced preparations are its ideal match.
🎲 The Bottom Line
Persephone is the best wine program in Jackson Hole you'd never expect to find inside a bakery. If you're in town and you're not stopping here for a glass and something from the pastry case, you're doing the trip wrong.
Jackson Town · Jackson Hole · Barbecue
Bubba's doesn't pretend to be a wine destination, and we respect the honesty — but the list is the definition of set-it-and-forget-it. Order a beer, enjoy the ribs, and save your wine curiosity for somewhere that reciprocates.

Teton Village · Jackson Hole · Outdoor Bar
The Handle Bar is the kind of wine program that does exactly what it needs to do for its setting — no more, no less. You'll drink well here if you pick smart, but this isn't a destination for wine people so much as a very competent resort bar that happens to have Opus One on the list.

Downtown Jackson · Jackson Hole · Cafe / Bakery
Persephone isn't a wine destination, but it absolutely punches above its weight for what it is — a bakery-café with a genuinely thoughtful short list of natural pours at fair prices. If you're in Jackson and want a glass of something interesting without the steakhouse markup, this is your move.

Town of Jackson · Jackson Hole · French-Inspired Bistro
The Bistro earns its stripes as a reliable wine destination in Jackson Hole — the sommelier influence is visible, the European focus is coherent, and the list has depth worth exploring. Just go in knowing the markups are hotel-resort territory, and steer toward the Old World bottles where the curation is strongest.

East of Jackson · Jackson Hole · Steakhouse / Grill
The Grill at Spring Creek Ranch delivers a competent, crowd-pleasing wine list that matches the lodge aesthetic perfectly — reliable, a little expensive, and zero risk. If you're here for the views and the bison, you'll drink well enough; just don't come expecting the list to match the drama outside the window.

Bin22 is the wine bar that has no business being this good in the middle of Wyoming ski country, and that's exactly why we're sending people here. If you're in Jackson Hole and you care about what's in your glass, this is the only address that matters.
