Wingman Metrics
Perry's comes in with 74 labels and 43 by-the-glass options — numbers that sound impressive until you start reading. This is a steakhouse wine list built for the expense-account crowd: approachable names, zero friction, nothing that requires a conversation.
The list leans hard into crowd-pleasing California — Caymus Conundrum, Rodney Strong Merlot, Hartford Court Chardonnay — with a handful of European touches that feel more decorative than intentional. The Domaines Barons de Rothschild Lafite 'Les Légendes' at $50/bottle is a reasonable nod to Bordeaux, and the R. Prüm 'Essence' Riesling shows someone at least glanced beyond the Sacramento Valley. Still, there are no real deep cuts here: no compelling Rhône, no Italian beyond the Santa Cristina and Ca'Bianca, and the Burgundy shelf is conspicuously empty for a steakhouse at this price point. The Perry's Reserve house labels at $60/bottle are a curious flex — branded wine is always a conversation-stopper.
Forty-three glass pours is an unusually large number, and Perry's earns credit for giving drinkers real options without forcing a bottle commitment. The range runs from $9.50 (R. Prüm Riesling) to $49/glass at the top end, with most solid picks landing in the $10–$15 range. Rotation doesn't appear to be a priority here — this reads more like a locked-in program than a dynamic list.
The Bottom Line
Perry's is a reliable steakhouse wine program — fair pricing, a broad glass selection, and enough variety to keep most tables happy without any real effort on your part. If you want adventure or discovery, look elsewhere; if you want a competent, frictionless list that won't embarrass you on a work dinner, Perry's delivers exactly that.

· Dallas · Brazilian Steakhouse
Fogo de Chão Dallas brings a reliable, if uninspired, wine list that leans on brand recognition over discovery — the Bodega Garzón Albariño and Zuccardi Malbec are the standouts in a sea of familiar faces. If you're here for the meat, the wine list will keep you covered; just watch the markup on the glass pours, which can quietly run up a tab. We'd send a friend here for the experience, not specifically for the wine.

STK Dallas is a place to be seen, not a place to drink well — the wine list is a predictable lineup of brand names with almost no by-the-glass program to speak of. Order a cocktail, or commit to a bottle and go straight for the Twomey.

Y.O. Ranch's wine list does the job without doing much else — it's a safe, brand-heavy selection that keeps the room happy but won't make any wine drinker's night. Come for the beef, order the Malbec or the Il Poggione, and don't overthink it.

Y.O. Ranch Steakhouse takes its wine as seriously as its beef, which is rarer than it should be. The Cabernet runs deep, the global bench is real, the Coravin program lets you drink up, the markups are fair for the tier, and the Texas section gives the whole thing a personality. Skip the trophy-label tax, lean on the Rioja, the Pinot, and the homegrown Texas pours, and you'll eat and drink like the buyer clearly intends.

Ellie's is a respectable hotel wine list that earns its Wine Spectator nod without ever threatening to surprise you — California crowd-pleasers at steep markups in a beautiful room. If you're celebrating or just want a reliable bottle with a great burger, it does the job; just don't expect the list to take you anywhere you haven't already been.

Mercat Bistro is the kind of French wine list Dallas doesn't have enough of — focused, French-forward, and priced without arrogance. If you're eating the classics, you should be drinking them too, and this list makes that easy.

Riverwalk · San Antonio · Steakhouse
Brenner's on the Riverwalk punches above the average tourist-strip steakhouse — 159 labels with real dessert wine depth and some genuine international range is nothing to dismiss. Pricing is likely steep given the location, and the list skews traditional, but if you know what you're looking for, there's something worth ordering here. Go in with a plan, skip the obvious bottles, and don't leave without looking at the dessert wine section.

· Las Vegas · Steakhouse
Strip House's all-by-the-glass format is smart for a Vegas crowd that wants to explore without committing, and the list has more personality than most hotel steakhouses — the Testamatta and the Lingua Franca Chardonnay prove someone made actual choices here. Prices skew high at the top end, but the $15–$25 tier offers genuine quality. Come for the steak, stay for the glass pours, and skip the Kosta Browne unless the night calls for it.

· Boston · Steakhouse
The Palm Boston's wine list reads like someone handed a natural wine buyer a steakhouse budget and said 'do something interesting' — and they did, with six well-chosen bottles at prices that won't wreck your evening. It's too small to call it a destination for wine, but it's too good to ignore if you're already here for dinner. Ask about what's available by the glass and go straight for the Crochet Sancerre.
