But don't let the brevity fool you: there's a Pét Nat, a Vermentino, and a Muscat sitting alongside the expected Cab Sauv, and that alone tells you PAMEC isn't just phoning it in. This is a small producer doing its own thing, and the list reflects that with a refreshing lack of pretense.
Every bottle on the list is a PAMEC Winery release, so you're getting a winery flight disguised as a wine bar menu — which is either your thing or it isn't. The range is actually more interesting than it sounds: the Italian-leaning Sangiovese and Vermentino signal some real varietal ambition, the Cabernet Franc shows they're not just chasing Napa fashion, and the Pét Nat is a genuine wildcard that most Temecula spots wouldn't dare stock. Whites, reds, rosé, and a sparkling option are all represented, which is plenty for a patio pour situation. The obvious gap is anything from outside the estate — no guest bottles, no regional context — but that's a philosophical choice, not laziness.
By-the-glass specifics aren't confirmed, but given the winery format, it's reasonable to expect pours across the lineup. With bottles topping out at $42, even if glass pours run standard restaurant fractions, you're not getting gouged. The Pét Nat at $28 a bottle is practically begging to be cracked open by the glass on a warm Temecula afternoon.

The cheapest bottle on the list is also the most interesting one. A pétillant naturel from a small Southern California producer at $28 is legitimately good value — this style runs $25-40 at retail from comparable producers, and drinking it on a winery patio is exactly the context it was made for.
PAMEC Winery Vermentino 2022
Most people walking into a Temecula wine bar are reaching for the Chardonnay or the Rosé without a second thought. The Vermentino is the better call — it's a Mediterranean white that brings texture and a slightly saline, herby edge that the Chard almost certainly can't match. Most guests walk right past it.
PAMEC Winery Cabernet Sauvignon 2023
At $42, the Cab Sauv is the list's ceiling price, and it's the most predictable pour in the building. Nothing wrong with it on paper, but when you're at a winery that's making Vermentino and Pét Nat, ordering the Cab Sauv feels like driving to a ramen shop and ordering a burger.
PAMEC Winery Sangiovese 2022 + Charcuterie board
Sangiovese's natural acidity and savory edge are built for cured meats, hard cheeses, and olives — exactly what a winery tapas situation should be putting in front of you. The 2022 vintage gives it enough structure to cut through fat without overwhelming lighter bites.
