The wine list at Palm Beach Meats reads exactly like you'd expect from a place this focused on premium beef — big Napa Cabs, a Rosé for the table, and not much that strays outside the comfort zone. It's a hits-only lineup built to move bottles, not to challenge anyone. That's not necessarily a crime when the Wagyu is this good, but don't come here hoping to discover something new.
The list runs 30-60 labels deep, leaning hard on Napa Valley and Sonoma with some Argentina and Bordeaux rounding out the edges. Caymus and Jordan anchor the Cabernet side, which is fine — these are crowd favorites for a reason — but there's no real depth beyond the familiar faces. Argentina gets a nod, which hints at the kind of meat-forward pairing logic that makes sense here, but it's not explored nearly enough. If you came hoping for a grower Champagne or a Left Bank classified growth at a fair price, keep walking.
The by-the-glass program runs 8-15 options in the $12-$22 range, covering the expected bases: a Cab, a Pinot, a Rosé, probably a Chardonnay. Meiomi Pinot Noir and Whispering Angel Rosé show up as predictable pours — solid enough, but nothing that's going to make you put down your fork and take notes. Rotation doesn't appear to be a priority; this list feels like it was set once and left alone.
Jordan Cabernet Sauvignon Alexander Valley — $45
If Jordan lands at the lower end of the bottle range here, it's the smart play — it's a consistently well-made Cab that can hold its own against Wagyu without the Caymus premium. Worth asking the price before you order.
Argentina Malbec
The Argentinian section doesn't get much love on a list like this, but a good Malbec and a Wagyu burger is one of the most honest, underrated combinations in a steakhouse context. Worth asking what they're pouring from that region.
Caymus Cabernet Sauvignon Napa Valley
Caymus is everywhere, and restaurant markup on this bottle is almost always punishing. You're paying for brand recognition at this point — the wine stopped being a revelation a long time ago, and you can almost certainly find something more interesting on this same list for less money.
Jordan Cabernet Sauvignon Alexander Valley + Wagyu Steak
Jordan's Alexander Valley fruit has enough structure to stand up to the richness of a Wagyu cut without overpowering the beef's natural fat and flavor — it's the kind of pairing that makes sense on paper and holds up on the plate.
