The wine list at Ox + Anchor arrives looking exactly like you'd expect inside a hotel steakhouse: polished, confident, and very committed to Paso Robles. It's the kind of list that wants to make you feel like you're getting something special — and sometimes it delivers, as long as you know where to look.
The list leans hard into Central Coast terroir, anchored by the heavy hitters of Paso Robles — Niner, DAOU, Justin, Tablas Creek — which reads more like a greatest-hits anthology than a curated exploration. Tablas Creek's Esprit de Tablas is the one selection that shows real range and a nod to Rhône-style blending, suggesting someone in the building has taste beyond the obvious. Outside the local focus, the broader list fills in with familiar names and safe-bet regions that won't challenge anyone. If you came hoping for a Burgundy deep-cut or an Argentine outlier, reset your expectations.
The by-the-glass program runs 12-18 options, which is respectable for a steakhouse of this size. We'd expect the pours to skew heavily Cabernet and big reds — sensible given the menu, though it doesn't leave much room for adventure. Rotation doesn't appear to be an active priority here, so what you see is likely what you'll get on your next visit too.
Niner Wine Estates Cabernet Sauvignon — null
Niner is a genuinely solid Paso producer doing right by the appellation without charging prestige-label prices. In a room full of four-figure flex bottles, this is the Cabernet that actually earns its spot on the table.
Tablas Creek Esprit de Tablas
Most tables here are going straight for the Cabernet, which means the Esprit de Tablas gets overlooked. It's a serious Rhône-style blend from one of Paso's most important estates — and it's genuinely interesting in a list that mostly plays it safe.
DAOU Vineyards Soul of a Lion
DAOU's flagship is a legitimately impressive wine, but at hotel steakhouse markup it becomes an exercise in paying for the label. The price-to-pleasure ratio breaks down fast when you're already in steep territory — you can do better on this same list.
Justin Isosceles + Bone-in Ribeye
Isosceles is a Bordeaux-style blend with enough structure and dark fruit to hold its own against a well-marbled ribeye without flattening the meat. It's a classic steak-and-Cab move done with a local twist.
