MÄS doesn't hand you a wine list — it hands you a pairing. At $45 for lunch and $150 for dinner, the wine program is baked into the tasting menu experience, which means the kitchen and the cellar are working in lockstep from the jump. It's a commitment, but for a place this deliberate about food, that level of intention on the wine side feels right.
The focus here is aggressively local — Oregon, the Rogue Valley, Pacific Northwest producers you won't find at your neighborhood wine shop. Circadian Cellar shows up on both ends of the spectrum with a 2020 Chenin Blanc and a 2021 Primitivo, which tells you something about how far this list is willing to roam regionally. The Maison Jussiaume Blanc de Blancs 2019 adds a bit of French grounding without abandoning the hyper-local ethos. It's not a sprawling list, but every pour earns its seat at the table.
Individual glass pours aren't really the model here — MÄS runs on pairings, so you're either in or you're out. That said, the pairing structure means the by-the-glass experience is curated course-by-course, which is arguably more interesting than picking one wine and riding it through six courses. If you're not into committing to the full pairing, ask the staff — they're plugged in enough to navigate a partial arrangement.

Circadian Cellar Primitivo 2021
Primitivo from the Rogue Valley is not something most people expect or seek out, which makes it exactly the kind of wine MÄS is built to champion. Most diners will zip past it without a second thought — don't be that person.

At $150, the dinner pairing is a serious investment that only pays off if you're fully bought into the tasting menu experience. Going solo on the pairing without a dining partner to share the ride can feel like a lot of financial weight on a night out — make sure you want the whole picture before you commit.
