The focus is singular: JCB wines, period. If you came hoping to explore twenty producers, turn around; if you came to go deep on one house's take on Burgundy and California, pull up a seat.
The list is tight by design — this is a branded experience built around Jean-Charles Boisset's portfolio, with Napa Valley and Burgundy as the two pillars. You're getting the JCB No. 69 Cabernet Sauvignon from Napa, the No. 81 Chardonnay from Russian River Valley, and the No. 3 Pinot Noir from Burgundy itself — a genuinely interesting cross-continental comparison if you lean into it. The Crémant de Bourgogne rounds out the sparkling side and gives you a credible alternative to Champagne at a lower price point. The gap is obvious: zero guest producers, no regional diversity beyond the house — but that's the whole point of this place.

Most guests here gravitate toward the Burgundy bottles for the romance of it, but the Russian River Chardonnay is quietly doing serious work — cooler climate, better acidity than you'd expect from a Napa-adjacent house, and genuinely competitive with what you'd pay for at a tasting room down the road.
JCB No. 69 Cabernet Sauvignon Napa Valley
Napa Cab in a tasting salon setting at these price tiers is almost always the steepest markup for the most familiar flavor profile. Nothing wrong with the wine — but if you're paying $40–$75 per person to be here, spending it on the Burgundy or the Russian River Chardonnay teaches you something. The Cab teaches you that Napa Cab exists.
JCB No. 3 Pinot Noir Burgundy + Cheese and charcuterie board
A proper Burgundy Pinot Noir next to a well-built cheese and charcuterie board is one of the more reliable combinations in the canon — the wine's earthy, red-fruit character cuts through the fat of the charcuterie without overwhelming the more delicate cheeses. It's also the most transportive pour on the menu, which fits the theatrical vibe of the room.
