Walking into the JCB Tasting Salon feels less like a tasting room and more like a Parisian salon that took a wrong turn into Napa Valley — opulent, intentional, and unapologetically extra. The focus is singular: JCB wines, period. If you came hoping to explore twenty producers, turn around; if you came to go deep on one house's take on Burgundy and California, pull up a seat.
The list is tight by design — this is a branded experience built around Jean-Charles Boisset's portfolio, with Napa Valley and Burgundy as the two pillars. You're getting the JCB No. 69 Cabernet Sauvignon from Napa, the No. 81 Chardonnay from Russian River Valley, and the No. 3 Pinot Noir from Burgundy itself — a genuinely interesting cross-continental comparison if you lean into it. The Crémant de Bourgogne rounds out the sparkling side and gives you a credible alternative to Champagne at a lower price point. The gap is obvious: zero guest producers, no regional diversity beyond the house — but that's the whole point of this place.
By-the-glass specifics aren't published, but the experience is structured around curated tasting flights rather than individual pours, which means you're committing to a sequence rather than cherry-picking. That's fine if you trust the curation — and given that a sommelier is on staff guiding the experience, most guests are in good hands. Don't show up expecting to order a single glass and linger.
JCB Crémant de Bourgogne Brut — null
Crémant is chronically underrated relative to Champagne, and this one earns its place at a Burgundy-focused salon. Traditional method, same grapes, fraction of the prestige markup — it's the most honest pour on the menu if you're watching the bill.
JCB No. 81 Chardonnay Russian River Valley
Most guests here gravitate toward the Burgundy bottles for the romance of it, but the Russian River Chardonnay is quietly doing serious work — cooler climate, better acidity than you'd expect from a Napa-adjacent house, and genuinely competitive with what you'd pay for at a tasting room down the road.
JCB No. 69 Cabernet Sauvignon Napa Valley
Napa Cab in a tasting salon setting at these price tiers is almost always the steepest markup for the most familiar flavor profile. Nothing wrong with the wine — but if you're paying $40–$75 per person to be here, spending it on the Burgundy or the Russian River Chardonnay teaches you something. The Cab teaches you that Napa Cab exists.
JCB No. 3 Pinot Noir Burgundy + Cheese and charcuterie board
A proper Burgundy Pinot Noir next to a well-built cheese and charcuterie board is one of the more reliable combinations in the canon — the wine's earthy, red-fruit character cuts through the fat of the charcuterie without overwhelming the more delicate cheeses. It's also the most transportive pour on the menu, which fits the theatrical vibe of the room.
The Bottom Line
The JCB Tasting Salon is a one-house show — and if you're good with that, it's a well-run, beautifully staged one. The steep pricing and narrow scope keep it from Rager territory, but the cross-continental angle and proper sommelier guidance make it a legitimate Wild Card worth booking once.

The Restaurant at North Block sits in one of the most wine-rich corridors on the planet, and somehow managed to put together a list that maxes out at four pours. The prices are fair, but the effort is not. Come for the food, order a glass of the Vetriccie Rosé, and make peace with the fact that the wine program simply isn't part of the draw here.

Go for the experience, order confidently by region, and don't expect the list to surprise you.

If you want to spend an evening exploring what a single Napa estate produces across whites, rosé, Zinfandel, Merlot, and multiple Cabernet expressions — including older large-format bottles — this is a genuinely interesting way to do it. Just don't come expecting breadth or outside discovery. Send a friend here if they love Priest Ranch or want to.
