You walk in expecting margaritas and leave surprised that you're drinking a Grenache Blanc from Paso Robles with your tacos. The wine list is short — 30 to 50 bottles — but it's doing something right by leaning into the Central Coast backyard instead of padding with bulk California brands. For a tequila-forward spot, the wine program punches above its weight.
The list stays close to home, and that's not a cop-out — it's a smart play when you're sitting in the middle of wine country. Paso Robles Rosé, Central Coast Albariño, Vermentino, and Grenache Blanc anchor the whites, which is exactly the kind of aromatic, higher-acid lineup that actually works with spicy, citrus-driven Mexican food. The bottle range tops out around $75, which keeps things approachable without feeling like an afterthought. The red options aren't the focus here, and they don't need to be.
Eight to twelve pours by the glass at $10 to $16 is a solid spread for a casual downtown spot. The glass list leans into whites and rosé, which is the right call for the cuisine. Rotation isn't aggressive — don't expect a weekly surprise — but the selections are consistent enough to trust.
Central Coast Albariño — $13
Albariño at this price point in wine country is a genuine deal. It's bright, saline, and cuts right through the richness of seafood tacos. At mid-tier glass pricing, you're getting a wine that earns its keep every sip.
Grenache Blanc
Most tables are going straight for the tequila or reaching for Rosé, and the Grenache Blanc gets overlooked. That's a mistake. It has more texture than the Albariño and an herbal edge that holds its own against bold, chile-forward dishes.
Paso Robles Rosé
Rosé is fine here, but it's the safest, most expected choice on the list — and likely the one with the thinnest margin advantage. With Vermentino and Grenache Blanc on the same menu, there's just a more interesting glass to be had for the same money.
Vermentino + Ceviche
Vermentino's herbal bite and citrus edge mirror the lime and fresh herb work in a good ceviche without competing with it. It's a textbook match that most people at Fish Gaucho are leaving on the table.
The Bottom Line
Fish Gaucho isn't a wine destination, but it's a wine-country restaurant that actually thought about its wine list — and that matters. Come for the tacos and tequila, but don't sleep on the glass of Albariño or Grenache Blanc sitting right there on the menu.
