Wingman Metrics
Eddie Merlot's walks in wearing a very convincing steakhouse suit — polished room, serious beef, entrees running $40 to $70+. The wine list feels like it was built to match that energy: safe, Napa-forward, and priced to reflect the zip code rather than any particular generosity of spirit.
From what we can piece together, the list leans heavily on Napa Valley and Argentina — the two regions that steakhouse regulars reliably reach for without much coaching. That's not a criticism of those regions, but it does mean you're probably not stumbling onto anything that surprises you. There's nothing wrong with a Malbec next to a ribeye, but a list built almost entirely around what's comfortable rarely pushes anyone toward something better. Gaps in the Old World are likely real and probably wide.
We don't have a confirmed by-the-glass count or specific pours to report, so we'll be straight with you: the details here are murky. Given the format and price point of the restaurant, expect a standard steakhouse BTG lineup — a few Cabs, maybe a Chardonnay, possibly that Malbec. Whether they rotate it or just set it and forget it is unclear, but our money's on the latter.
The Bottom Line
Eddie Merlot's is a dependable upscale steakhouse that delivers on the beef side of the equation. The wine program appears to be functional rather than inspired — a crowd-pleasing list built to sell confidently, not to excite. If you're coming for a business dinner or a straightforward date night and want a Napa Cab with your prime-aged ribeye, you'll be just fine. If you want something to talk about on the drive home, you might need to bring your own bottle or do a little pre-visit homework.
Burr Ridge · Burr Ridge · American Steakhouse
Eddie Merlot's is a competent, predictable steakhouse wine program — it'll get the job done for a business dinner or a birthday without embarrassing anyone, but it isn't a destination for serious wine drinkers. The markups at this category of restaurant tend to run steep relative to retail, so go in with calibrated expectations and focus your budget on the steak, where this place clearly puts its heart.

· Brentwood · American Steakhouse
What we have here is a wine program that either doesn't try very hard or hasn't been documented well enough to make a case for itself — and neither is a good look. The six wines we can confirm are all tied to a single brand dinner, which means the everyday list remains a mystery. Until Del Frisco's Grille Brentwood shows us a real, standing wine program with range and honest pricing, we'd steer you toward the cocktail menu.

If you're coming to Del Frisco's Grille in Southlake for serious wine, the list as we've documented it will leave you wanting. Six labels, all from one producer's family of brands, with no pricing transparency and no confirmed by-the-glass program is not a wine experience — it's a placeholder. Order a cocktail or ask what's actually available beyond the event menu, because what we found isn't enough to plan a wine-forward evening around.
