The wine list at Djon's reads exactly like you'd expect from a white-tablecloth waterfront steakhouse that's been doing its thing for decades — Caymus, Rombauer, Jordan, all the familiar faces. There's nothing here to surprise you, but if you came for USDA prime and a bottle of Napa Cab, this list delivers without embarrassing itself.
California dominates from top to bottom, with Napa Cab and Chardonnay doing the heavy lifting — Stag's Leap, Caymus, Far Niente, Jordan, and Rombauer are the pillars. There's a nod toward Sonoma and a brief detour to Burgundy, but the list doesn't really commit to anything outside the California comfort zone. Chateau Ste. Michelle Riesling is the one curveball, quietly sitting there for anyone who actually wants something food-friendly with the lobster. Red wine lovers eating steak will be satisfied; anyone hunting for Rhône, Italian, or even a solid Pinot beyond Meiomi is going to feel underserved.
The by-the-glass program runs a predictable eight to fourteen options, almost certainly anchored by Meiomi Pinot Noir and Rombauer Chardonnay — the two bottles every Florida restaurant has had on their glass list since approximately 2014. Pours are priced in the $10–$18 range, which is fair for the market and the setting, but don't expect much rotation.
Jordan Cabernet Sauvignon — $40–$60 (est.)
Jordan consistently punches above its price class — structured, polished, and built for a ribeye. In a list that skews toward Napa trophy bottles, this is the one that gives you real Cab quality without the Caymus premium.
Chateau Ste. Michelle Riesling
Everyone at the table is ordering Chardonnay, but this is the smarter call for the lobster. Dry-leaning, crisp, and priced well below everything else on the list — it's the wine the kitchen would probably choose if they were eating on the clock.
Meiomi Pinot Noir
You can buy this at Publix for $14. Whatever they're charging at the table, the math doesn't work in your favor. It's sweet, it's soft, and it's not what Pinot Noir is supposed to be — order the Jordan instead.
Stag's Leap Wine Cellars Cabernet Sauvignon + USDA Prime Ribeye
Stag's Leap has the structure to hold up to a well-marbled prime cut without overwhelming it — classic California Cab with enough restraint to let the beef do the talking. This is the pairing the list was clearly built around.

Djon's is a reliable play if you're in Melbourne Beach and want a proper steak-and-wine night without any surprises. The list won't dazzle anyone, but it gets the job done — just steer toward Jordan or Stag's Leap and leave Meiomi for the tourists.
