Common Thread is where Savannah's wine-curious locals go when they're ready to graduate from Cabernet and Pinot Grigio. Wine Director Libby Burk — a 2024 StarChefs Rising Star and one of three sommeliers nationally profiled by Wine Enthusiast for 'getting us to drink different' — hand-selects and personally tastes every bottle on the list. This is a sommelier's passion project disguised as a neighborhood restaurant.
Burk's philosophy centers on indigenous varietals, organic and biodynamic growing, and sustainable practices. She started as a maitre d' at The Grey, where legendary wine director Scott Waldrup mentored her. When Waldrup passed away in 2017, Burk inherited his wine books and notes — that legacy shows in every bottle she selects. Expect Basque whites (Hondarrabi Zuri), natural wines, pet-nats, and producers you've genuinely never encountered. The specific list loads as image-based slides on their site, but a StarChefs pairing noted Hondarrabi Zuri/Chardonnay with flounder — if a Basque white grape is making the pairings list, this program is serious about discovery.
The glass pour program is the gateway drug for Burk's indigenous varietal mission. She's not trying to sell you the most expensive bottle — she's trying to change what you think wine can be. The team runs wine events including 'People, Pets, and Pet-Nat' where guests taste petillant naturel wines while dogs from One Love Pet Rescue are available for adoption. Not as deep as Common's 710-bottle cathedral, not as famous as The Grey's James Beard pedigree, but arguably the most exciting wine program in town for anyone who wants to learn something new every visit.
