The wine list at Cibo leans hard into California Cabernet Sauvignon — like, really hard. It's the kind of list that signals the kitchen takes more risks than the wine buyer does, but at least the pricing doesn't make you wince.
There are eight Cabs on the bottle list alone, ranging from the entry-level Ramsay North Coast all the way up to Caymus and AXR at the top. Beyond Cab, options thin out quickly — a couple of Merlots including the respectable Keenan Spring Mountain, and a lone Syrah from L'Ecole No. 41 that feels like it wandered in from a better list. Italy is supposedly part of the regional focus, but the evidence on the wine side is harder to spot than a Barolo at a Florida steakhouse. If you want variety beyond big California reds, you may find the list frustrating.
By-the-glass counts aren't fully published, but the $11 entry point via Ramsay Cabernet is reasonable. The glass program doesn't appear to rotate much, and there's no sign of an active BTG discovery program — what's there is there, and it's been there a while.
Cabernet Sauvignon, Ramsay 2020 North Coast — $40
At $40 a bottle, Ramsay delivers clean, approachable California Cab without the markup anxiety. It's a workhorse producer with quality far above its price tier — order it without overthinking it.
Syrah, L'Ecole No. 41 2018
On a list drowning in California Cabernet, this Washington State Syrah from one of the Columbia Valley's most consistent producers is a quiet outlier. Most tables will walk right past it, which means more for you.

At $158, you're paying a significant premium for a wine that's become more brand than bottle. Caymus is fine, but at this price in a casual Fort Myers dining room, the value case just isn't there — step down to Turnbull or Sailors Grave and pocket the difference.
Cabernet Sauvignon, Turnbull 2020 Napa Valley + Spaghetti
Turnbull's structured Napa Cab has enough fruit and backbone to hold up against a rich meat-sauced pasta without steamrolling it. It's the sweet spot on this list — not a splurge, not a compromise.

Cibo is a reliable dinner destination where the wine list does its job without embarrassing anyone, but if you came looking for discovery or depth beyond California Cab, you'll need to manage expectations. Send a friend here for a solid meal with a decent bottle — just don't send a wine geek expecting to be surprised.
