You open the wine list at a Mexican restaurant in San Francisco and expect to see the usual suspects — maybe a Chilean Cab, a California Chardonnay, a token Malbec. Instead, every single bottle on this list is Mexican. All 64 of them. That alone earns a double-take.
This is one of the most focused regional wine programs we've seen at a restaurant of any cuisine type — not just Mexican spots. The list leans heavily into Baja California and Valle de Guadalupe producers, with serious representation across sparkling, rosé, white, and presumably red categories. Casa de Piedra, Almaxeniza, Bodegas Santo Tomás, Casa Madero — these are real producers making wines worth drinking, not novelty pours. The sparkling section alone has six distinct bottles, including a Brut Nature Gran Reserva and both a Blanc de Blanc and Blanc de Noir from Casa de Piedra's Espuma de Piedra line. The white section shows genuine range: Chenin Blanc, Sauvignon Blanc, Chardonnay, Gewürztraminer — all Mexican-grown and thoughtfully sourced.
Thirty-seven by-the-glass options is an extraordinary number — that's more than most wine bars offer. The Casa Magoni Manaz comes in at $16 a glass, which gives you an accessible entry point into the list. With this many pours available, the program clearly wants you to explore, not just order the first thing you see.
Cavas Valmar Chenin Blanc 2024 — $48
Chenin Blanc from Baja at this price point is a genuine bargain. Cavas Valmar is a real producer doing interesting work in Valle de Guadalupe, and Chenin is a grape that rewards attention — bright, food-friendly, and nothing like what your table expects to drink at a Mexican restaurant.
Valle Seco Mourvedre Rosé 2021
Mourvèdre rosé from Mexico is genuinely unusual. Most people skip right past it in favor of something they recognize, but this is exactly the kind of bottle that makes a list like this worth exploring. Mourvèdre-based rosés tend to run savory and structured — an interesting contrast to the bright, citrusy stuff everyone else orders.
TresParaUno Blanc de Blanc Sparkling
At $98, this is the most expensive bottle on the list and a significant jump above everything else in the sparkling section. The Casa de Piedra Blanc de Blanc is sitting right there at $58 — a serious producer with a proven track record in Mexican sparkling. Unless you have a specific reason to spend $40 more, save it.
Trasiego Grenache Rosé 2023 + Tacos de Camarón
Grenache rosé has the fruit weight and subtle spice to stand up to grilled shrimp and salsa without overwhelming it. At $48, you're not overthinking the order — you're just drinking well.
The Bottom Line
Cantina Los Mayas has built something genuinely rare: an all-Mexican wine list with real depth, fair prices, and the conviction to stick to it. If you care even a little about discovering what Mexican wine actually tastes like, this is the place to do it.

89Agave is almost certainly a fun spot to eat — it's a cantina in Sedona, and the margaritas are probably doing the heavy lifting here anyway. If wine matters to your evening, order something simple by the glass and move on; this program isn't the reason to visit.
