You walk into a casino restaurant and expect a Kendall-Jackson list with 400% markups β what you get instead is 267 selections backed by a 4,000-bottle cellar and a sommelier who actually shows up. The room earns its confidence: columned dining room, domed frescoes, a long curved bar that says 'we take this seriously.' This is not an accident.
The California spine here is legitimately impressive β Alpha Omega, Darioush, PlumpJack, Peter Michael, Paul Hobbs, Silver Oak β these aren't filler names dropped to look fancy, they're the actual heavy hitters of Napa and Sonoma. The list stretches beyond California into Italy, Spain, Argentina, Chile, Australia, and New Zealand, which keeps things from feeling like a one-region vanity project. There are real gaps in the Old World depth if you're hunting for Burgundy or RhΓ΄ne rabbit holes, but for a California-focused program this is as thorough as it gets outside of a dedicated wine bar. Most tables are reaching for the Silver Oak or the Duckhorn, which means DOAU sits quietly on the list without much fanfare. It's the kind of small-production Napa producer that rewards the curious β worth asking the sommelier to walk you through it.

Silver Oak is a great bottle and there's nothing wrong with it β but it's also the wine every table orders when they want to look like they know wine without actually deciding anything. You're in a room with 267 options and a real sommelier. Use them.
Darioush Winery Cabernet Sauvignon + Bistro Crab Cakes
Counterintuitive, yes β but Darioush's Cab runs structured and dark-fruited with enough grip to stand up to the richness of crab cake without drowning the seafood. Ask the sommelier; they'll back us up or steer you somewhere even better.
